Sugar Cookie Drops

Love these! Very easy to make and very tasty. I made a few diffentent kinds just by rolling a few in sugar, chocolate, and/or cinnamon and sugar before baking. They were perfect little cookies.

Dilled Zucchini

So simple and delicious! I boiled the cucumber halves (because, admittedly, I read the directions wrong), took them out with tongs and put them on a plate. I seasoned with salt, pepper, dill, a tiny dash of paprika and PARMESAN! then I pour BLASAMIC VINEGAR over the zukes (rather than using fatty oil or butter). Quick and filling.

Easy Corn Chowder II

Delicious and harty! I loved this and it made for great left-overs (that I was, conveniently, able to bring to work for lunch). I tweaked it slightly in that I used one can of creamed celery and instead of evaporated milk, I used a couple blops of sour cream. It was creamy and delicious and I can't wait to make more.

Hummus Pizza

I had a lot of fun with this dish, although I tweaked mine slightly. I bought artisan bread and let it warm up in the oven as I sauted bell peppers and cucumbers. After a few minutes, I pulled the bread out and spread a generous amount of red bell pepper hummus over the entire thing. Then I put the sauted bell peppers and cucumber on top and topped that off with feta cheese. It was soooo delicious and made excellent left-overs.

Vegetarian Chickpea Sandwich Filling

Delicious!! And so simple to make. I used lilme instead of lemon (personal preference) and spread a little dijon mustard on the bread. Delicious and hearty and quick. I'd say a perfect sandwich filling or appetizer (served on small, toasted pieces of bread). I will make this again and again and again...

Chocolate Crinkles II

This recipe is dangerous. It is simple to make and makes quite a large batch of cookies. Which is why it is so dangerous. They are like little mini brownies/chocolate cake. My boyfriend and I LOVED these. I'll definitely make these again (although I'll give half away for my own good).
