Fat Free Orange Balsamic Vinegrette

Pretty good for a fat-free dressing, far better than most of the store bought I've tried. I like it on spinach salads with low-fat Feta and dried cherries or craisins.

Smoked Gouda Mac and Cheese

Refried Beans Without the Refry

This is definitely a keeper! With the reviews, I made these changes: 1 small can diced green chilies (for our taste), part chicken broth instead of all water, and decreased salt to 2 tsp. Just perfect! If you have a small household, scoop out meal-sized portions of beans onto a wax paper-covered cookie sheet. Put in the freezer until frozen, then transfer to a freezer bag for long term storage. Then just pull out a portion each time you need it.

We made this for Girl Scout Thinking Day, and everyone wanted the recipe. For those who found it sticky: It may need a slightly longer cooking time. By the time I form the balls from the cooled mixture, it is more satiny than sticky.

Easy Sausage Strata

A good start, but I adjusted it in several ways. After reading the comments about salt, I cut it down to 1/2 teaspoon. Even that was a bit much. Also, I found all that sausage made a very heavy dish, so I substituted mushrooms for 1/4 lb of the sausage (cooking them together). Finally, I used half white and half whole wheat bread. This resulted in a dish that got a number of requests for the recipe!

Chunky Cheesecake Brownies

A keeper! I taught a Holiday Cooking class for middle school kids, they all wanted the recipe. The one thing I changed was to melt the chocolate and butter in the microwave. Some reviewers said it was too sweet, and I agree that you could cut back the sugar a bit with no harm to the flavor. But it was still good as presented.

Spaghetti Carbonara I

That is a huge amount of bacon for six servings, I'd cut it in half. Also, the eggs are tossed with the hot pasta to cook, not scrambled into little lumps.

Ham and Fresh Basil Pinwheels

A very useful recipe for snacks and potlucks. I added a few tablespoons of ranch dressing to the cream cheese to make it a bit more spreadable, and add a bit more seasoning.

Jam Muffins

Good, but the muffin itself needs a bit more flavor. We added 1/2 tsp vanilla, (next time we might add 1 tsp). We also increased sugar to 2/3 cup (next time we might try part brown sugar.)
