Pumpkin Bread I

This came out delicious! To make it even healthier, I used 2.5 cups of white flour and 1 cup of of whole wheat flour, and only used 2 cups of sugar. Next time I'll try using 2 egg / 2 egg whites (instead of 4 eggs).

Stuffed Eggplant with Shrimp and Basil

Delicious! I doubled the shrimp, used panko breadcrumbs, and added mushrooms, red onion, and a little mozzarella I had in the fridge. I cooked all the veggies first, and added the diced shrimp last so the shrimp wouldnt over cook. I added the breadcrumbs and chesses, then put the mixture in the shells and baked for 30 min. Turned out fantastic.

French Ham Cheese and Egg Fondue Casserole

I made this for Easter Brunch and it turned out fabulous! It tasted gourmet and was so easy! The texture of the eggs and bread was light and fluffy. I added extra cheddar, but besides that, I followed the recipe exactly!

Corned Beef and Cabbage I
