Lemon Chicken Piccata
Perfect Chicken Piccata!! The only BIG thing I would recommend changing is to thoroughly rinse the pan after you cook the chicken and before making the sauce. I know she mentions to take any brown bits from the bottom of the skillet. But, the sauce comes out much, much better if you just rinse the skillet entirely with water, slightly dry it, then add some cooking spray and a teaspoon of vegetable oil before moving on to step #3/before making the sauce.

Broccoli Chicken Casserole I
I made this recipe following the tips of the first reviewer with the exception of adding the onion powder as I was out of that spice and I used stuffing instead of cornflakes. But, I have to say that I really didn't like this dish. The stuffing didn't taste good at all and it was way too creamy/soupy for me...not a fan.

Spinach Basil Pasta Salad
This dish is great---both light and satisfying! I did change it up a bit though. After I cooked the oil, garlic, and prosciutto, I threw in the spinach, basil, pine nuts, and some lemon juice (2-3 tbls) and cooked them all together for 5-6 minutes. I know the recipe calls for uncooked spinach and basil. But, I preferred it better cooked. As such, I doubled the amount of spinach I used in the dish as well (6 ounces just wasn't enough). Make sure you don't add any more salt--the prosciutto has plenty!! Great reheated too!!
