White Chocolate Raspberry Cheesecake

Reviewed: Aug. 19, 2012
Absolutely wonderful. I used Ghiradelli white chocolate baking bar so I could make my own chocolate curls with a vegetable peeler. I made my own whipped cream with heavy whipping cream, vanilla, powdered sugar and stabilized it with unflavored gelatin (so it wouldn't "weep" and deflate). I lined a round glass Pyrex with parchment paper and baked with a water bath. Baked for 50 min then shut oven off and left it in the oven for another 45 min. I halved the recipe so baking times may be different for each person. What a wonderful special occasion dessert! Thanks for the recipe.

Chuck's Favorite Mac and Cheese

Reviewed: May 15, 2012
It left a little to be desired as it doesn't necessarily replace my craving for restaurant mac and cheese. It wasn't exactly as creamy as I hoped for but I suppose I could making a white sauce first then adding cheese = more work and that's not what I was looking for. I added a whole head of broccoli, 1 cup milk, half the amount of sour cream, no cottage cheese cause I didn't have any on hand, half the panko (all I had), no butter... Just sprayed top w cooking oil and tossed it in a 8x8 baking dish. Oh yeah, and an egg. I would like to try it with cottage cheese next time and maybe omitting the egg will help w creaminess. Overall, very easy and recommended.

Angel Chicken Pasta

Reviewed: Oct. 5, 2011
A little too heavy and salty for my liking. I think I will try sodium free mushroom soup and add milk next time. Good flavor but just a little too rich.

Denise's Peanut Chicken

Reviewed: Dec. 2, 2010
YUM! I added Sriracha sauce (asian hot sauce) and 2 tablespoons of peanut butter to make a sweet and spicy sauce- doubled the sauce recipe.. but ended up having too much so I thickened with flour. But I used some of the extra suace to marinade the chicken (used boneless skinless chicken thighs). I also added broccoli and topped on white rice. A little time consuming but the fresh spices made the sauce awesome so worth the time.

Alfredo Sauce

Reviewed: Nov. 23, 2010
Wonderfully easy alfredo sauce! I didn't know what to expect as the ingredients were pretty basic but it turned out wonderful! I have always been a little IF-ie of making a good alfredo as I thought it would be too rich... too salty... too bland. I am definitely a beginner when it comes to cooking and I will definately be making this one again. I used fat free half and half to cut the heaviness (and calories!) and sauteed the garlic in the butter before adding the cream. I added creamed spinich and roasted tomatoes and folded them in at the end and omitted the parsley as I didn't want to waste the rest of the bushel. I topped farafelle pasta with grilled chicken strips and the awesome alfredo. Only problem I had was getting the shredded parmesan cheese to melt completely. Maybe next time I will try gruyere. Thanks for the recipe- this ones a keeper!!
