Oven-Baked Caramel French Toast

Turned out awesome!!! Changes I made were: 1 full loaf of french bread torn in pieces, added 2 extra eggs, used almond milk, 2 apples chopped, did not use nutmeg and did not put second layer of caramel sauce. Also I just used a whisk in a bowel instead of blender and baked it covered for 35min then uncovered for 10min. Our guests loved it. Came out perfectly cooked.

Just made this tonight. So good we used a mix of chard, kale and spinach. I used red pepper flakes instead of green chili. We also added some paneer made it perfect. Thank you for a great recipe. We will be making this one over and over again.

Zucchini Coconut Loaf

Whole family loved this bread. I cut the sugar down to 3/4 cup and used applesauce in place of the oil and raisins (did not soak them)in place of the currants. It came out very moist and ohh the delicious smell. My husband drove me crazy bugging me to cut it. We just could not wait more then a few hours before the we dove in. Thank you for a wonderful recipe.

Six Can Chicken Tortilla Soup

OH YUMMMMMMM!!!!! Just left the dinner table. This is one of the best soups I have ever eaten!!!!! I used fresh chicken and added cilantro, cumin and a little cayenne pepper. Also I roasted the can of corn in a smoking hot cast iron pan then added it to the soup. It was so good that my 12 year old daughter wants to make it for her home-ec class. We served it with the tortilla chips, sour cream, black olives and mexican cheese blend and a side salad. Thanks Terryn :)
