Traditional White Bread

This was my first attempt at making bread and I was quite pleased with the results. I used butter instead of lard and it worked fine. The bread is nice and crispy on the outside and fluffy on the inside. Perfect for making sandwiches.

Old-Fashioned Pumpkin Nut Loaf

Moist and delicious! Very easy to make. This recipe uses more pumpkin than most recipes I've seen, resulting in a great pumpkin flavor. This recipe makes great muffins too.

Banana Bread II

Excellent recipe! I added some vanilla and cinnamon for extra flavor. I also used about 1 1/2 c banana (2 lg bananas). It came out so well that I made another loaf the next day. My search for a great banana bread recipe stops here! It's a great basis recipe that you can add your own tastes to such as nutmeg and other spices or chocolate chips.

Connie's Zucchini "Crab" Cakes

Excellent cakes! As suggested by others, be sure to drain off as much liquid as possible before adding the bread crumbs so that the cakes crisp up nicely. I also added more old bay. I may try using cooking spray instead of oil next time to make them a bit healthier.

Zucchini Patties

WOW! These are soooo good! Very easy to make. I tweaked the recipe a bit though since it seemed a little bland as is. I added some black pepper, parsley and garlic. I also threw in some chopped mushrooms since they go so well with zucchini. I think next time I'll try different cheeses and other complementary veggies like red bell pepper. These would probably go really well with some marinara sauce too.

Sweet Corn Tomalito

This stuff is great!! Just like what they serve at Chevy's. I used canned corn instead of frozen and it worked just fine. It was a tad sweeter than I like, maybe due to the corn which was itself quite sweet. I'll cut the sugar down next time. I also think I'll cut the butter in half to make it a bit healthier. 5T seemed excessive. Overall a great recipe!

Suki's Spinach and Feta Pasta

This is a really tasty recipe! I put more garlic and red pepper flakes to cater more to my personal tastes. I also added some dried basil and a pinch of oregano. I cut the oil in half to make it a little healthier and it was plenty to cook with. I'll definately be making this often!!!

Bagels II

These were ok. This was my first time making bagels so there may have been something wrong with my technique. The bagels were a bit dense. They didn't have the crispy on outside, chewy on inside texture but was more like dense bread. I used half WW and half white flour. I added poppy seeds and dry onion flakes to the dough and topped the bagels with poppy and sesame seeds. The recipe itself is easy to follow. I might try it again someday.

Simple Whole Wheat Bread

Excellent recipe! I halved the recipe and only used 1/3c honey (I think it would have been too sweet with the second addition of honey). Also, instead of bread flour I used all-purpose and added 1 T of vital wheat gluten for each cup of AP flour. I baked 2 loaves as is and the third I made into a cinnamon raisin bread and all came out wonderfully. It's a great basic recipe that I will look forward to playing around with by adding different grain flours/seeds/dried fruits and nuts.

Tofu Parmigiana

This recipe didn't work so well for me. I followed suggestions to spray the tofu and then press it into the breading, which worked really well for coating the tofu. But then I tried to pan fry the tofu and all the breading came off. But even with a bad experience it was a great idea that just needs more experimenting.
