The Best Rolled Sugar Cookies
My 13 year old daughter made this recipe ALL By HERSELF while I sat my happy (tired) butt on the couch, LOL! She started it at about 7:45pm on a school night and I was a little bit perturbed, to say the least, because I know what's involved in making cookie dough! She insisted that she did not want, nor need my help. I agreed to let her do it on her own! Once she finished the dough and covered it, she refrigerated it overnight. When she got home from school the next day, she rolled out the dough and made the cookies. Not only did they taste DELICIOUS, but she baked them to PERFECTION! I must say that I was quite impressed with her handy-work! The only negative in the whole situation was that my ENTIRE 30"x60" kitchen island was COMPLETELY covered in flour (along with everything else in the kitchen)! But, I have to give her credit where credit is due - it worked! So, if a 13 year old amateur in the kitchen can make this recipe, then ANYONE can!

Creole Cornbread Stuffing
I love the consistency and all the ingredients. I decided to use prepackaged cornbread mix to save time, and I had to use 3 pouches to get enough cornbread. I also did not use the 7 eggs at the end, just the evaporated milk. I did not use hot sauce, green chili peppers or white pepper and it was still just a little bit too "peppery" for my family. I think next time I will just use the white & black pepper, and a pinch of cayenne pepper. Also, instead of stuffing it in my turkey, I precooked 2 pounds of chicken thighs and used the stock from that for the dressing, and shredded the chicken, added it to the dressing and baked covered with aluminum foil at 350 for 1.5 hours (last 20 minutes uncovered and stirred periodically to get it to brown throughout - this is how my grandmother does it.) I'm from south Louisiana and it reminds me of my grandmother's cornbread dressing. Overall, I love this dressing and will definitely make it again.

Lemon Meringue Icebox Pie
Easy & delicious! I made this pie for my 8 year old son who LOVES lemon meringue pie. The only alteration I made was to add a little more sugar to the meringue. It seemed to help stiffen it up better.
