Oven Roasted Red Potatoes

Reviewed: Feb. 23, 2011
I crush up the onion soup mix almost to a powder so nothing burns as many reviewers have complained about and I also let the potatoes marinate in the fridge with the oil and soup mix for an hour or so before cooking. My big change to the recipe though is to cut the potatoes into bite size pieces rather than in half. It gives them a lot more surface area to crisp up while cooking. For cooking them I dropped the temp to 400 and cooked them for an hour instead of 40 minutes, stirring them once. They come out crispy on the outside, soft on the inside and all around flavorful everytime!

Best Easy Chicken Croquettes

Reviewed: Feb. 23, 2011
Overall this recipe is very easy, much easier than I anticipated croquettes to be. I have two gripes with the recipe though. First, there is no suggestion of using a NON-STICK skillet to brown the croquettes. It was really frustrating to take a large skillet, as directed, and when flipping the croquettes have the browned breading come right off sticking to the pan. After one turn I transferred them into a non-stick skillet and it worked much better. My second gripe is the amount of poultry seasoing in the croquettes. There is far too much for this amount of chicken, breadcrumbs etc. If I were to make this recipe again I would cut the 1/4 tsp of poultry seasoning that goes in the meat mixture to 1/8 tsp. Overall the textures of this was great but the over powering flavor of too much poultry seasoning ruined it for me. Maybe if I do make this agin with less seasoning it will turn out how I expected/wanted it to and I will be ableto come back and give it a higher rating but until then, I wouldn't recommend it :(

Double Tomato Bruschetta

Reviewed: Oct. 15, 2011
O.M.G! SOOOOO delicious!! Other than doubling the recipe for a big party I followed the recipe for the tomatoe mixture almost exactly. The only thing I changed was the olive oil. I still can't believe it but I ran out of the olive oil so in a last minute pinch I used the left over oil from my sun-dried tomatoes. I figure t only added more yummy flavor than the olive oil alone. As far as the rest of the recipe goes I used fresh mozzarella cheese in place of the shredded and I rubbed garlic on the french bread slices after toasting them under the broiler. I will use this recipe from here on out! There is no other bruschetta recipe in my opinion!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: May 10, 2011
I made this for my daughters birthday party thinking that the kids would like it as well as the adults. It was devoured by all, young and old, and every adult there asked where I got my recipe from because it was delicious and unique. I made the recipe just as it reads using strawberry preserves. The only thing I will change next time I make this, and I will make it again and again, is that I will make at least double the amount of chips. By just making the 10 tortillas the chips only lasted about half way through the bowl of salsa. GREAT recipe!

Gourmet Sweet Potato Classic

Reviewed: Nov. 25, 2010
AMAZING!!! I made this and another sweet potato casserole, the classic with marshmallows, for Thanksgiving. The classic dish was barely touched but this was completely gone. Everybody loved it! Including me and I was a bit upset that there were no left overs lol. Good thing this is a fairly easy recipe and I can whip it up again just as soon as I get to the store for more sweet potatoes! I don't think I ever want the marshmallow casserole EVER again!!!

Apple Pie by Grandma Ople

Reviewed: Nov. 24, 2010
This pie is amazing!! Amazingly simple to make and amazingly delicious!!!! I stuck with the granny smith apples but there is NO WAY I could have put 8 apples into it unless maybe it was a deep dish pie. I used 5 and it was more than slightly mounded. I added 1 tsp. of vanilla and 1 tsp. of cinnamon to the butter mixture and as other reviewers suggested I mixed the apples with 2/3 of the butter/sugar mix before adding them to the crust. I brushed the last third of the mixture over every inch of my lattice crust and then baked it at 350 degrees the whole time. I peeled, cut and cored my apples using an apple peeler/corer/cutter which cut my apples a little thinner than I normally would for baking so it only took 45 minutes of baking before they were tender and the crust was a golden brown scrumptious delight!

Fluffy French Toast

Reviewed: Feb. 25, 2011
Best french toast recipe I have found yet! I tried it with french bread I had left from the night before and also with plain old wheat bread that we always have on hand and they were both delightful.

Easy Slow Cooker French Dip

Reviewed: Feb. 23, 2011
YUM YUM YUM! Delicous and easy! I ended up using a lite beer even though other reviewers said not to. My husband and I both like lite beer so I wanted to make sure it was flavor we would like. About 30 minutes before serving I took the other reviewers advice and cut the meat then placed it back into the juices to cook a little bit more. When serving I put the meat onto a warm buttered french roll as the recipe called for and then put a slice of provolone cheese on top and broiled it until melted. These were a huge hit for a dinner with friends and I would make/eat them regularly if rump roast wasn't almost 5 dollars a pound around here!

Italian Spaghetti Sauce with Meatballs

Reviewed: Nov. 24, 2010
Delicious! I used one 28oz can of crushed tomatos and one 28oz can of whole peeled tomatoes to have a smoother sauce and in the end I still ended putting about 1/2 in the blender to smooth it even more. My husband can find a chunk of tomato with his eyes closed and absolutely hates them. Other than that substitution and the blending I stuck to the original recipe. It did take a good amount of time but it was well worth it. Far better than any jar of sauce you can buy and the meatballs were a wonderful texture and flavor.

Cheese Fondue

Reviewed: Oct. 15, 2011
I made this for a party I threw and the flavor was edible but in no way good.I followed the recipe to a T, did not change a single thing. I will never use this recipe again and I will be removing it from my recipe box. (I did have a few friends attending the party who arrived early taste it too and they all agreed.

Master Pizza Dough

Reviewed: Feb. 23, 2011
Love this recipe! Just a few ingredients but such a great crust! I follow the recipe as is until the very end. I like a golden crust on my pizza so I usually egg wash the crust and then sprinkle with parmesan cheese. Light and fluffy on the inside but crispy on the outside... overall delicious! An added bonus is you don't have to wait an hour or even longe for the dough to rise... just make it and in the time it takes for you to get your toppings out of the fridge it is ready to use!
