Soft Chocolate Cookies

Very tasty and quick to put together. I found my batter held up enough that I didn't need to refrigerate; instead of rolling into balls, I just treated it like a drop cookie. I also added a pinch of kosher salt to the top of each cookie before baking - the salt really brings out the flavor of the chocolate. Great recipe!

Easy Slow Cooker Ham

I thought this was very tasty. It yielded a very tender, moist and flavorful ham. I used a 3 lb pre-cooked ham, halved the other ingredients, and cooked on low for 6 hours. The ham had a very sweet flavor to it. The only thing that is missing is a good "crust" on the top, so the next time I make it, I might not completely cover it with the cider.

Kay's Spaghetti and Lasagna Sauce

I just wasn't "wow-ed" by this recipe. Overall, I thought it was bland and needed a lot of salt to pump up the flavor. I also wasn't a fan of having to blend the tomatoes before adding them to the meat mixture - I felt it was an extra step that I would have skipped by using something other than the stewed tomatoes. I might try playing around with some variations, but as is, this recipe didn't cut it for me.

Bacon and Date Appetizer

I made this for a Thanksgiving appetizer. Simply delicious! The sweetness of the dates goes great with the saltiness of the bacon. I stuffed half of them with almonds and the other half with water chestnuts, and they both turned out great. Overall, very simple to make too.

Pumpkin Fluff Dip

I made this recipe for an autumn themed baby shower and everyone loved it. They couldn't believe there wasn't cream cheese in it. I served it with cut apples, but it tastes so much like pumpkin pie filling, I think it would be great to fill a graham cracker pie crust with it and serve as a frozen pie. Excellent recipe!

Amazing Italian Lemon Butter Chicken

Zucchini Risotto

This was ok. I prefer a more traditional risotto made with more butter and wine. I found the thyme flavor to be overpowering. Really the only saving grace for this recipe was the sun-dried tomatoes, they added great flavor.

Pasta Pascal

Pretty good! I cut the olive oil down to 1 Tablespoon, added 1 medium zucchini and only used 1/2 lb of pasta. These changes cut the calories on this dish down to 300! I also think that using fresh herbs would really make it more flavorful. I thought it was tasty, but not amazing. It was also very fast to prepare.

Country-Style Grilled Ribs

I was really disappointed in this recipe. Method wise, it was easy, but the meat didn't come out tender at all. Flavor wise, it was not great. The celery seed was really overpowering. If I were to use this method again, I would use store bought sauce instead.

Chili Rellenos Casserole

This was super easy and had great flavor. However, it really didn't hold up like a casserole. It seemed more like a cheese dip. If you are a cheese love, you won't be disappointed - it's loaded with cheese. We followed the recipe as written, except we did substitute in enchilada sauce instead of tomato sauce. My husband and I both thought it could use something else for stability. The egg/milk/flour mixture did not hold it together at all. Next time, I think I will try to put cornbread in for the first layer, and halve the amount of cheese. I also thought shredded chicken would be a great addition.

Shredded Beef Enchiladas

I'm only giving this recipe a 4, but it has potential to be 5+. I halved the recipe, but followed the instructions as written. The beef didn't turn out great. I think there was potential for great flavor there, but it cooked way too fast on the stove and was overdone and hard to shred. The next time I make this, I will do the beef in a crockpot on low for 6 to 8 hrs and then shred. I also think that it's too time consuming, messy, and unnecessary to fry the corn tortillas in oil - I will make casserole style next time and layer the tortillas, cheese sauce and beef. I also will add some jarred enchilada sauce to pour on top. The cheese sauce is fantastic as written - creamy and flavorful, it adds a lot to this dish. Black olives would be a nice addition too.

Spanish Rice II

This was pretty good - the chili powder provides a definite kick, but there's not really any complexity of flavors here - really all you taste is chili powder. As another reviewer suggested, I would substitute a can of green chilis for the green pepper. I also would cut the chili powder in half and add some fresh cilantro at the end.

Seasoned Turkey Burgers

Very tasty - a great low fat burger option. I didn't have an egg on hand, but otherwise followed the recipe exactly. The burgers were moist without being greasy and had lots of flavor. I served with swiss cheese slices and a dollop of homemade cranberry sauce. yum!

Three Cheese Manicotti

Very, very good! I followed the recipe as written, except instead of jarred spaghetti sauce, I used "Best Marinara Sauce Yet" from this site. The filling had a really nice flavor. I piped the filling into the shells out of a ziploc bag, and worked well, although it was a little cumbersome. Will definitely make again!
