Divine Meatloaf

My family loved this recipe! I didn't have any crackers, so I added Italian bread crumbs. I added the veggies it called for and about 1/4 c of julienned carrots I had from another recipe. I didn't have the beef soup packet, so I softened a beef bouillon cube in the microwave and mashed it together with about a 1/4 c of dried onion flakes, then added this to the meat mixture. I started cooking the meatloaf at 400 degrees WITHOUT the sauce (I like the outside a bit crunchy!) After 30 mins., I lowered the temp to 375 and added the sauce which I had preheated in the microwave so as not to lower the temp of the meat. My super picky 3 year old said it was, "kinda yummy." This is a GOOD THING!

Cream Cheese Frosting II

This is SO easy to make, and it tastes so much better than store bought. I didn't realize that store bought had TRANS FAT in it!!!!!!!!!!! YUCK! I am so happy I decided to make this for my 4 year olds birthday cake. I actually used the light cream cheese, but you'd never know it! It was great. Thanks for sharing.

Baked Omelet Squares

So easy, so yummy! To cut back on a few calories, I substituted Southwestern Egg Beaters for half the eggs. Since we use 2% milk, I used that. I used Oscar Meyer precooked bacon that I crisped up in the microwave for 1 minute instead of ham. Since I made it a day ahead, I cooked it at 350 for 30 minutes, then reheated at 350 for 15 minutes. I took it to a friend's house for breakfast, and it was a hit! Thanks so much for sharing!!!

Salmon with Brown Sugar Glaze

This is so simple yet so delicious!!! The glaze works magic with the salmon, and I actually followed the "How to Cook Salmon" video also on this site. I've cooked it many times before, but it didn't wow me. This cooking method and these ingredients WOWed my whole family! It was so flavorful! Definitely a keeper if you want young children to try this super healthy fish.

Baked Omelet

So easy and so versatile! You could really add many different spice/meat/cheese combination to change this up. This basic recipe was perfect for a picky little one who doesn't like anything "spicy."
