These enchiladas were excellent! We had a few couples and their kids over for Christmas the other night and everyone raved about them. Just about everyone wanted seconds. Luckily I had made 1 1/2 of what the recipe called for. The reason I gave it four stars is that I ran out of sauce and ended up having to make another batch...that still wasnt even enough so had to make more a 3rd time, and they were due to come at any minute. They ended up being moist and tastey suprisingly, even tho it had still seemed like there just wasn't enough sauce to make them more gooey. Next time I will just make alot of extra sauce. The homeade sauce was soo tastey. I added a 2 Tablespoon of taco seasonings instead of the chilis, just for a little more of a flavourful punch. Because they were just a litle dry, I cut the enchiladas, just like you would a cake into individual servings and it held together nicely like lasagna. I added a little taco seasoning to the meat as well, and then spooned a little garlic refried beans into each tortia along with the meat. I will definatley be making this recipe again. This is the kind of recipe that everyone will want to ask you for! With the extra sauce, I would DEFINATLEY give them 5 STARS!
