Texas Pork Ribs

OH SO GOOD! didn't make the sauce and didn't put on the grill (someone stole it earlier this year).. so just low and slow in the oven made it very tasty and tender! I did add 1 tsp crushed red pepper also for more heat. This rub covered 2 1/2 slabs of ribs (without the bonless edge portion.. used that in the "Best Stovetop BBQ Ribs" recipie [let that one slow cook another hour for FALL APART TENDER ribs]). I served this with "Grandmother's Buttermilk Cornbread" and fresh lemonade .. went GREAT together!

Zucchini Yogurt Multigrain Muffins

So very good and my 7yr old can eat his veggies! I made changes as I didn't have all the ingredients. I doubled the recipe using 4 cups white flour and 2 cups oatmeal, used canned pumpkin instead of applesauce, used a full 17 oz container of GREEK yogurt, cut the honey down to only 1/2 cup for the double recipe, didn't have the nuts or raisins. These were GREAT! my son won't touch carrots or zucchini or yogurt .. till now! I used a BIG square cake pan for the double recipe.. baked on 350*F for about 35 min (till toothpick came out clean)

Carrot Cupcakes with White Chocolate Cream Cheese Icing

So yummy! I did make changes though... reduce white sugar to 1 cup (it was still very sweet.. I'll try 3/4 cup next time), traded RUM EXTRACT for the vanilla, ADDED 1/2 cup unsweetened coconut, (and used the BEST cinnamon .. SAIGON cinnamon), and omitted the walnuts. I baked for 25 minutes and they were soo moist :D they didn't need the topping.. a good stand alone cupcake! DEF MAKE AGAIN!!

Whitney's Peanut Butter Cookie Balls

super easy, very good, they are sweet, they do get soft when not in the fridge. I gave these for xmas gifts with other no bake cookies .. ppl loved these and the no bake rum cookies over all the ones I made! when making them again .. I'd put a gooey chocolate center in them. I used a 'melon' scoop with the ejector handle to scoop for controlled portioning.

Cocoa Rum Balls

Holy Moly! these are WONDERFUL! having tried chopping and roller pin-ing nuts earlier (and lacking a food processor) I used an old fashioned hand grinder (attach to the table like for grinding meat or whatever) and it was quick and easy! found this 'Universal' brand grinder in a thrift shop for $4! I made 2 double batches and used a melon scoop (scrape upwards on side of bowl to pack) and dropped them in a 5:1 powdered sugar:cocoa mixture. YUMMY! I used regular Captain Morgan rum. Giving these and other NO BAKE cookie ball types as Xmas gifts this year ;)

Busy Day Deer

I had large steaks.. about an inch thick (size of both my hands laid flat) and I didn't have the soup it called for. I cut steak into 1/2 inch cubes, cooked with one med red onion and one white onion chopped, and cooked in 1 stick butter with 3 med/lg fresh garlic cloves. added 1 red and 1 yellow pepper roughly chopped and rough chopped thick mushrooms when meat was half done.. covered/simmered low about 10min (stirring a time or two). uncover and added cream of potato soup, cheddar soup, and one can of milk. the only seasoning I aded was about a tsp of fresh cracked pepper. I didn't need the flour since I used canned cream soup. it turned out nice and creamy and not gamey (cut into small pieces for the 'flavors' to go all the way through) We liked this the best of the venison recipes! Thank you for the suggestion :) (I rarely stick directly to a recipe)
