Creamy Kohlrabi Soup

Awesome! This is the best thing I've ever made with kohlrabi. I threw in some carrots and subbed millet for the orzo. I also added chopped kohlrabi greens after the puree, and added the milk (a bit less) at that time. No extra salt needed. Loved by the whole family - Double this!

Easy, delicious, and multiplies easily for a crowd! Substitutions work well. I use fresh garlic (in lieu of salt) and serve with a big chunk of avocado.

Cinnamon Swirl Bundt Coffee Cake

This was good! My batter consistency was weird and doughy, and I thought I might end up with a failed cake, but it worked out in the oven! Because of the odd consistency, I blended in the cinnamon (upped to 2 T) and omitted the extra sugar, instead of going for a swirl. I also used 1 cup pecans, yogurt instead of sour cream, part whole wheat flour, and reduced the entire sugar content to 3/4 cup. Delicious flavor and plenty sweet!

Southern Turnip Supreme

Awesome! I doubled it, boiling the chopped greens separately in a broth/water mixture (2.5 cups per pound), and stirred them into the turnips, whuch I drained. I upped the yogurt (sub for sour cream) and spread it into a casserole dish. Sprinkled with extra cheese and baked at around 350 for 12 minutes or so. No salt needed, just some griund pepper. A hit at the fall equinox potluck!

Zucchini Brownies

Awesome! I reduced the sugar to scant 1 cup, used half whole wheat flour, and subbed half applesauce for the oil. I also upped the finely grated zucchini to about 3 cups, letting the batter sit a few minutes to moisten. No frosting necessary!

Mini Frittatas with Quinoa

Not bad - I am vegetarian, so I replaced the ham with bell pepper and onion. I used fresh basil in lieu of parsley and sharp cheddar instead of swiss. The texture of the quinoa was ... unexpected. I was also surprised that these didn't have much flavor - a spoonful of salsa really helped ramp it up!

Bird Seed Energy Bars

Following the advice of others and my own tastes, I made a few alterations: ground flax seed, extra egg, extra spices, 1/2 coconut oil 1/2 applesauce, cut the sugar and honey in half. Well, the mixture was extremely dry and powdery, so I ended up blending in about a cup of buttermilk to moisten it properly. They taste yummy out of the oven! I would add 1/2 cup dried fruit or chopped nuts next time.

Zucchini Parmesan

Simple and delicious! Gobbled up even by the summer squash haters. I used plenty of zucchini and added a bell pepper and a bunch of kale (all sauteed in the same pan as the onion and garlic). Less cheese. Served with a loaf of crusty rosemary bread.

Carrot Recipe

We loved this dish for breakfast! I decreased the sugar to 1/2 cup and will go even less next time. No need to mash or dry - we like it swimming in milky sauce. I sprinkled it with cinnamon, clove, and nutmeg. Yum!

Baked Brie in Phyllo with Mango Chutney

Family loved this! I tried unrolling the phyllo frozen, and ended up with broken sheets ~ they still worked fine! I used butter instead of olive oil and organic canned cranberry jelly for the topping. Yum! A great how-to base recipe.

Sweet Sourdough Cookies

Soft and tasty, a good base. I always need ways to use up my starter! I used whole wheat flour and reduced the sugar a bit, using part Rapadura. No need to grease the sheets. Cookies were nice on their own, though plain, so I whipped up Vanilla Glaze from my trusty Betty Crocker cookbook to drizzle on them. Awesome!

Very good punch that was well received at my party by adults and kids alike. Instead of apricot nectar, I pureed lite canned apricots (only apricots, water and sugar in the ingredients list) in the blender before the party. I reserved the puree in the fridge until it was time to make the punch, which kept the preparation quick. I also provided a bottle of vodka and a bottle of cherry amaretto on the side, and the adults enjoyed spiking their drinks.
