Baked Brie in Phyllo with Mango Chutney

Family loved this! I tried unrolling the phyllo frozen, and ended up with broken sheets ~ they still worked fine! I used butter instead of olive oil and organic canned cranberry jelly for the topping. Yum! A great how-to base recipe.

Sweet Sourdough Cookies

Soft and tasty, a good base. I always need ways to use up my starter! I used whole wheat flour and reduced the sugar a bit, using part Rapadura. No need to grease the sheets. Cookies were nice on their own, though plain, so I whipped up Vanilla Glaze from my trusty Betty Crocker cookbook to drizzle on them. Awesome!

Aileen's Punch

Very good punch that was well received at my party by adults and kids alike. Instead of apricot nectar, I pureed lite canned apricots (only apricots, water and sugar in the ingredients list) in the blender before the party. I reserved the puree in the fridge until it was time to make the punch, which kept the preparation quick. I also provided a bottle of vodka and a bottle of cherry amaretto on the side, and the adults enjoyed spiking their drinks.

Fabulous Zucchini Grinders

Loved by all! I used whole wheat burger buns because I couldn't find healthy hoagies. I sprinkled a thin layer of cheese (I used shredded Italian Blend) on the bottom of half of each and had no problem with sogginess (I mixed the rest into the vege blend). I coarsely grated the zucchini (which worked perfectly) and added onion, garlic, and bell pepper to the saute. While I did salt the zucchini, this seemed unnecessary ~ Just drain well after it cooks down. I used more marinara and only one cup of cheese, which was plenty. YUM!

Zucchini Quiche

Enjoyed by all, even my 12 year old who claims to not like zucchini. I spiraled the second layer of zucchini over the top, and my husband said it looked beautiful! I used fresh herbs and only 1 cup of shredded cheese, which was plenty. I also added chopped bell pepper and encourage trying other vege additions. I will omit the paprika next time ~ the flavor clashed. The ricotta is truly delicious in this. Since this is such a rich quiche, I will probably save it for special occasions.

Cherry Tomatoes and Olives

Different and delicious as written! My tomatoes didn't really wrinkle, they just started splitting open after a while. I do recommend chopping the olives to better distribute them. Easy to double.

Zucchini and Eggs

Simple and delicious! My son, who hates zucchini, gobbled it down and asked for seconds! My alterations: grated zucchini, 2 fresh garlic cloves in lieu of the powder, and a sprig of fresh chopped rosemary.

Zucchini Patties

We really loved this! I made a few alterations: Added 2 cloves of garlic. Tore one slice of bread into crumbs. Used 1 c. "Italian Blend" cheese shreds. Used 3 eggs. Flour as needed. I did NOT salt/drain the zucchini - No problem. We topped it with a blend freshly chopped tomato and basil, salt and pepper, and an olive oil drizzle. Yum!

Quinoa with Chickpeas and Tomatoes

Mild but good! I doubled the recipe, using a full can of chickpeas. I used halved cherry tomatoes and added a small red onion. I also subbed cilantro for the parsley. The flavor was nice, but I recommend more of the spices to make it stand out.

Eggnog from Scratch

My guests raved about this egg nog! I used local, farm fresh eggs and milk. I did not bother separating the eggs: this left an occasional slimy bit in the nog, which could be prevented by beating the egg whites until stiff. I did halve the sugar and the spiced rum (Kracken brand) ~ perfect!

Spiced Wassail

This wassail was a nice balance of sweet and tangy. My alterations: I used a 100% juice blend for the cranberry juice and heated the wassail by simmering it all afternoon in the crockpot. It was well received by my guests, and I set a bottle of Jack Daniels out for spiking.

As another reviewer suggested, I combined all the dry ingredients and added the cold milk ~ No lumps! I also reduced the sugar by 1/3, and it was still plenty sweet.

Chocolate Chip Peppermint Cookies

I love the combination of mint/chocolate! I added another 1/2 tsp. of peppermint and reduced the sugar by half (plenty sweet). I also subbed M&Ms for the chocolate chips, and the result was pleasing to the eye. 9 minutes of cooking time was enough.

Cheese Fondue

Very tasty recipe! I used smoked Gruyere, less nutmeg, omitted the salt, and added a spoonful of Dijon mustard. I also toasted the bread. Perfect amount of cheese for the bread, too. Yum!
