My favorite things to cook
I am vegetarian and gluten-free, so I cook within these areas. I enjoy making hearty meals with a variety of vegetables and making gluten- free lookalike and tastalike foods.
My cooking triumphs
I love to experiment with new foods and try to make something fantastic! Whenever I create a recipe and it turns out wonderful, it's a victory!
My cooking tragedies
When trying to make gluten-free cookies with the ingredients on hand, they have turned out to be one large cookie several times. But they're still delicious.

Rice Pancakes
These are surprisingly easy to make if you have leftover rice. These work better with overcooked (but not burnt!) rice. They hold together better. I made rice pancakes before with another recipe and it called for the rice to be mashed. I also remember reading about a "mouthwatering" recipe which included lemon juice, cinnamon, and vanilla- I included these this time and they turned out delicious. I have Celiac, but didn't have rice flour so I instead used instant mashed potato flakes. They turned out between a pancake and a hash brown- and were still good! I excluded the baking powder and instead of the vegetable oil used 0live oil- it's healthier. I will definitely make these again! Thank you Jamie!

Corn Tortilla Chips
These turned out great. Per the advice of another reviewer, I brushed the chips with oil (I used olive-it's healthy) and cooked them in the oven on a cookie sheet. When they had cooked about 8 minutes and were still soft, I then broiled them for about a minute. They turned out very crunchy and medium-brown. They might be better broiled for only 30 sec. Also sprinkled some with cinnamon sugar after brushing with oil; they are delicious!

Paella I
This was very good! The proportion of the ingredients seem just right. I made this vegetarian- style, without chicken, chorizo, or chicken broth. I instead boiled water with seasoning and then added the rice and cooked til done. After cooking the shrimp with the chopped tomatoes, I added the rice, peas, and more seasoning to taste. Little tip: MSG is found in some seasonings and some people have reactions to it. Some might get headaches, skin rashes, etc. from it. This recipe was wonderful!
