Best Bread Pudding with Vanilla Sauce

This was great. I only made a couple of small changes - we hate raisins so I used a handful of chocolate chips in their place. Instead of putting the bread into the egg mixture and then pouring it into the greased pan, I put the cubed bread in the greased casserole dish, sprinkled the chocolate chips on top, and then poured the egg mixture over it. I then pushed the bread that hadn't been soaked under to make sure it was all soaked. I made it in the morning and just heated it up in the oven while we were eating the main course and then while I was making the vanilla sauce. Delicious - thank you so much!

Black Bean and Corn Salad II

This was very good. I cut the olive oil down to 3 tbsp. as I feel the avocado makes that much olive oil unnecessary, and cutting it it brings the calorie count way down. I'd rather add an extra avocado instead and I may try that next time.

Slow Cooker Beef Stew IV

I liked this, but I gave oit four stars because I had to make so many of the adjustments that oyther reviewers suggested (changing water to beef broth, adding some more spices, throwing in some frozen peas, etc.) I also thought it had too much beef, so next time I make it I think I will reduce the beef to 2 lbs, cut down to 2 potatoes, and up the broth to 3 cups (I found it didn't have enough "liquid" compared to the amount of veggies/meat). Tasted good though - a real "comfort food style" beef stew.

Low-Fat Blueberry Bran Muffins

These are great. For those who are interested, I calculated the calorie count: 1 muffin = 100 calories, 0.7 g fat, 23.1 g carbs, 4.2 g fiber, 3.6 g protein.

Amazing Whole Wheat Pizza Crust

This was great. I divide the dough into six mini balls and freeze them to make individual, small portion pizzas that are delicious and low in calories. Love it!

White Chocolate Blueberry Cheesecake

This was excellent. I also increased the oven temperature to 300 degrees and kept it in about 10 minutes longer. I found that I had to double the clarified butter to get the crust to a consistency that I could press it into the pan - but it was great. I think I will double the sauce next time - I ran out and had to use pie filling - the sauce is truly worth it. It was quite big so I cut it into slices and froze it - it thawed beautifully. My husband raved about it!
