Pizza Dough I

Absolutely love this recipe! I've made it twice this week! I read some of the other reviews and took some of the suggestions but honestly, I think the recipe would have been a home run either way. I dissolved the yeast in the water with sugar while I measured the rest of the dry ingredients. I added 1 1/2 tsp each of italian seasoning and garlic powder to the dry ingredients then added the water/yeast and oil. I covered the bowl with plastic wrap and set it on the stove while I preheated the oven to 425. I let the dough set for about 20-25 mins then I pressed it in my pans (greased with crisco and dusted with a bit of cornmeal). It is one of the easiest doughs to press in a pan! Not too sticky that it sticks to your hands and it doesn't "pull back" like other doughs do. Pre baked the crust for about 7 min then took it out and added the sauce and toppings! My husband said it was the best home made pizza he's ever had! My daughter ate 3 pieces! An absolute keeper!

Fast Creamy Tomato Penne

This was ok, but I make something similar to this that we prefer. For the sauce I melt an 8 oz package of cream cheese into a jar of spaghetti sauce (homemade--but store bought would be fine) and if needed thin out the sauce with some of the pasta water . I also use Italian sausage instead of just ground pork and just put the onion and peppers in with the meat to give it more flavor instead of sauteing them separately. I also add minced garlic or some garlic paste for more flavor.

Zucchini Patties

These were ok. I made the recipe as directed and fried up a batch. They were a little bland. Still had some of the mixture in the bowl so I added some Italian seasoning to it and that helped. Still not great. probably won't make again.

Zucchini Coconut Loaf

Good recipe! Only gave it 4 stars because it was good, but not a memorable recipe. It didn't have the coconut flavor I was hoping for. I made it exactly as written. Next time I think I'll use coconut extract instead of vanilla to enhance the coconut flavor and I'll probably omit the nutmeg so that it doesn't over power the coconut. Otherwise the bread was moist and it tasted good...just not coconutty like I was hoping for.

Curried Chicken and Potatoes

I made this recipe yesterday. As written, I think it would have been really plain. I tripled all the spices (except the cayenne--I doubled that) I used ground cumin instead of cumin seeds (1 tsp all together) and I didn't have black mustard seeds but used regular mustard seeds instead. I also didn't have cardamom so I used chinese five spice. I used 6 skinless chicken drumsticks, 2 pints of tomatoes I canned last summer plus a 15 oz can of tomato sauce. I used half a quart bag of frozen swiss chard (squeezed all the water out) that I had frozen from the garden last year and diced 3 potatoes. I put all of this in the crock pot and cooked on low for 8 hrs. I then deboned the chicken and added it back to the sauce and added 2 cups of greek yogurt. It was still pretty bland, However, as it sat and cooled a little the flavors really started to pop! Had a little later before bed and it was really good! This is one of those recipes that get better as it sits. Will make this again with the changes I made but will make it in advance. Would be excellent as one of my cook for a month meals and frozen for use later!

Parmesan Sage Pork Chops

Loved these pork chops! Only made a few changes: added 1/8 tsp of ground sage to the flour mixture, used panko instead of the soft bread crumbs, my lemons must have been getting a little old because they didn't zest well so used what zest I could and squeezed the rest of the lemon in the bread crumb mixture, used 1 tsp of ground sage instead of the rubbed sage. My daughter loved them and my husband said they were the best pork chops I've ever made!

Spinach with a Twist

I can't believe how good this was! I was looking for a new veggie side dish when I came across this one. The mix of ingredients sounded strange (although I had everything on hand!) I used two 12 oz packages of fresh spinach and I used crumbled blue cheese and added bacon as recommended by other reviewers. My husband and daughter both loved it! I used the leftovers the next day by putting them on some black pepper and Parmesan focaccia bread that I cut in half and topped with provolone cheese. Baked for 10 min to melt the cheese and toast up the bread, it was another home run for mommy!
