About this Cook
I am the Head Chef/kitchen and catering manager for a 55 and older luxury living community. I am an experienced gardener and use a lot of fresh veggies in the summer and can and freeze a lot of veggies for the winter. I love to create new recipes and experimenting with different herbs and spices. I have a some what picky 9 year old who is my biggest critic! I love sneaking in veggies to meals that she doesn't know about! I can whip up a meal from scratch like no one's business!
My favorite things to cook
Everything! Love trying new recipes and creating my own. I make my own spaghetti sauce from scratch from my garden veggies as well as pickles, salsa, jelly, and freeze and can as much as I can for my family. I keep my meals budget friendly most of the time so we can afford the occasional "extravagant" splurge! I recently learned how to make home made yogurt which has turned out to be an awesome budget saver for us!
My favorite family cooking traditions
I cook from scratch. Not many store bought items on my shelves. I do buy pasta (even though I can and do make home made pasta some times) just because it is a time saver. Over the last two years or so, I've become a big fan of the make ahead meals. I spend a whole saturday cooking meals and freezing them so we have a month or more's worth of meals in the freezer.

Pizza Dough I
Absolutely love this recipe! I've made it twice this week! I read some of the other reviews and took some of the suggestions but honestly, I think the recipe would have been a home run either way. I dissolved the yeast in the water with sugar while I measured the rest of the dry ingredients. I added 1 1/2 tsp each of italian seasoning and garlic powder to the dry ingredients then added the water/yeast and oil. I covered the bowl with plastic wrap and set it on the stove while I preheated the oven to 425. I let the dough set for about 20-25 mins then I pressed it in my pans (greased with crisco and dusted with a bit of cornmeal). It is one of the easiest doughs to press in a pan! Not too sticky that it sticks to your hands and it doesn't "pull back" like other doughs do. Pre baked the crust for about 7 min then took it out and added the sauce and toppings! My husband said it was the best home made pizza he's ever had! My daughter ate 3 pieces! An absolute keeper!

Fast Creamy Tomato Penne
This was ok, but I make something similar to this that we prefer. For the sauce I melt an 8 oz package of cream cheese into a jar of spaghetti sauce (homemade--but store bought would be fine) and if needed thin out the sauce with some of the pasta water . I also use Italian sausage instead of just ground pork and just put the onion and peppers in with the meat to give it more flavor instead of sauteing them separately. I also add minced garlic or some garlic paste for more flavor.

Zucchini Patties
These were ok. I made the recipe as directed and fried up a batch. They were a little bland. Still had some of the mixture in the bowl so I added some Italian seasoning to it and that helped. Still not great. probably won't make again.
