Sopapilla Cheesecake Pie

I brought this a Fiesta yesterday and people LOVED it! I made only a couple of modifications based on other feedback. I used 3 boxes of cream cheese and cut the sugar in the mix down to 1 1/2 cups and the sugar for the top to 1/2 cup. I could probably even cut that back more as I had plenty left over. I also brushed the butter on the top layer of crescent rolls so could cut back on the butter next time as well. It's day 2 and still tastes amazing!

Mango-Peach Smoothie

Delicious! I changed out the soy milk for 1% but it was still tasty. Also added ice and will add vanilla next time.

Peanut Butter and Jelly Sushi Rolls

I was really hoping it would have looked like the cover photo. Mine were really, really small. I will try it again but may put the 2 pieces of bread together first to get some bulk to it.

Asian Salmon

This is probably one of the best salmon recipes I have tried. I only made a couple of modifications but it was still delicious. I left out the onions, as I didn't have any, and sprinkled cayenne pepper on top for a little more spice. I did not serve it over the rice but it fine by itself.

Taco Bake I

I made this last night and the whole family loved it. I did make a couple of changes: I added a layer of crushed up tortilla chips on the bottom, then the meat. I also combined the salsa with the beans and added some cheese, then spooned it over the meat. I topped it with the remaining cheese and bake until the cheese browns.

Slow Cooker Chicken and Dumplings

This was an excellent meal and so simple. I used 1 can of cream of celery and one can cream of chicken, plus 3/4 can of chicken broth. I added salt, pepper, italian seasoning, garlic salt, oregano and onion salt. I did not put an onion in as my family doesn't like them. This is a new family favorite.

Double Layer Pumpkin Cheesecake

I have never made cheesecake before so was pretty nervous to have my first attempt be for Thanksgiving but after reading all of the reviews and tips, I decided to go for it. HUGE SUCCESS! I used a springform pan and made a gingersnap crust. I upped the cream cheese to 3 packages. I used 3/4 c. of pumpkin pie filling rather then the puree and all of the spices. I love pumpkin flavor so I added about 1 tsp of pumpkin pie spice. I cooked for 55 minutes at 325 degrees, then turned off the oven to cool down. I left it on the counter for another hour and then to the fridge it went. Not one crack. My in-laws, who aren't big pumpkin or cheesecake fans asked me to leave them the pie and we could take the turkey leftovers. They loved it as did my picky son and husband. It was so easy!

Best Chocolate Chip Cookies

I've been searching for ages for an awesome chocolate chip cookie recipe. I was so excited to try this one because of the rankings it had received. While the cookies are good, they aren't spectacular and certainly not the best I've ever made. They were flat and crunchy.

Taco Dip I

I wanted to make something a bit different than the traditional 7 layer dip so chose this recipe. It was a huge hit and gone in minutes. I only used 1/2 the sour cream and did put refried beans on the bottom and thought it turned out great. Next time, I'll need to double the recipe since many people didn't get to try it :)

Beef Stew VI

I have never made beef stew before as I've always found it to be boring and the beef dry. This recipe was fantastic. I read other reviews and made only a couple of modifications: beef broth instead of bouillon and lots more cornstarch. What a great meal!

Seafood Fettuccine

I am not very good in the kitchen and tend to follow recipes to a tee. But based on all of the reviews to this recipe, I followed it somewhat and incorporated things into it like tomatoes for color, basil and Old Bay for some extra flavor and it turned out fantastic. This was the first time we opted not to do turkey for Thanksgiving and I am so proud of myself for pulling it off. Thank you!!!

Upside Down Pizza

I've used a recipe very similar to this one but I use Ragu Pizza Sauce instead of spaghetti sauce. You can also add your other favorite pizza toppings below the crust too like pepperoni, green peppers and onions. It makes for great leftovers too!
