Pumpkin Bar Icing

I made this to frost pumpkin pie squares and it was a hit. I added 1 tbsp of milk, to make sure the frosting stayed creamy rather than too firm because I made it the night before. Was wonderful, I sprinkled orange sugar sprinkles over the top.

These turned out just like the recipe! I used regular saltine crackers and lined my sheet with foil and sprayed well with Pam. Was careful to stir the butter and brown sugar for the full 3 min. after they started to boil and used the measuring cup to pour them on the crackers (good tip). The choc chips melt after a couple minutes, I just touched them and could tell. They spread easily with a spatula coated with some lard. The only thing I added was some additional holiday sprinkles to make them festive! Wonderful recipe, thank you!

Sweet Corn Bread

Great corn bread. I baked in my cast iron skillet. cut sour cream down to 1/4 C, and added a can of creamed corn. I also increased sugar to almost 3/4 C and plus added some honey. Came out nice and slightly sweet. Everyone loved it. I have made this several times now. a favorite.

Butterscotch Bread Pudding

Was excellant! My changes were to add 1/2 C. Golden raisens (soaked in Wiskey), 1 tsp cinnamon and decrease sugar to 1 C. Was plenty sweet. I used a loaf of french bread. I highly recommend this one! easy and good.

Chewy Chocolate Chip Oatmeal Cookies

Follow the tips and these were wonderful!! Increases flour to 11/2 cups, increase baking soda to 1 tsp, added half tsp cinnamon and only 1tsp real vanilla. Only used half tsp salt. Used only 2cups quick oats. I added 1 tsp molasses. Split the cookie dough and made one with choc chips and the other with pecans & golden raisins. Refrigerated dough 30 mins before and baked on parchment paper in my electric oven on 345, 9-10 mins. Do not over cook them! Cool full 5 mins before placing on cooling rack. Keep dough in fridg. 1 also added 1/4 tsp baking powder. Slightly under cook them. They were a Hugh hit. Very soft and chewy and great flavor, a keeper! Make them a bit bigger cause they do shrink a bit, they spread a little not a super thick cookie, but I like how they turned out. Only used the mixer for the butter and sugars and eggs, then mixed with spatula, don't over beat the dough. Will make these again and again! Thanks!

Pineapple Upside-Down Cake VII

Followed the tips to add juice from pineapples to the cake mix, I used betty crockers yellow cake mix. I used my 11" cast iron skillet and it cooked for nearly 45min in my oven. Make sure the center is fully cooked. I let it cool for about 12 minutes and inverted it on a large glass tray, it was beautiful. The cake was very fluffy and moist. Smelled heavenly, husband loved it! Thanks for this recipe!

Tater Tot Casserole

Read the reviews. We like things light and lower fat so here's my changes: used ground turkey. First sautéed onions and green bell pepper diced, reduced with a splash of white wine and broth, reduced for 3 mins. I had already browned the turkey, so added it to this mixture. Added cream of chicken soup, and half can of Hormel Turkey Chili ( for flavor), added a few jar jalapeño's chopped and season to taste. Sprayed oval casserole dish, put meat mixture then a light layer of Cheddar, topped with a bag of frozen mixed veggies. Top it with thawed Tater Tots. Baked at 350 for 50 mins, then broiled last 5 mins. Served shredded cheese at the table ( this saves calories)Tators were crunchy and the meat had good flavor. Hubby was surprised and had seconds! Will make this easy comfort recipe again! Thanks!
