Amish White Bread

Reviewed: Nov. 7, 2011
WOW!! This is just as good or better than I've read!!! I made it yesterday to take to a dinner and it was perfect! I used bread flour and lowered sugar to 1/3 cup. Great texture, taste, look, high rise, good dough to work with. Sliced perfectly. I had rave reviews and 9 of us ate almost 2 loaves!

Million Dollar Cake

Reviewed: Aug. 14, 2011
The first time I made this I used an orange cake mix and put some orange rind in. I liked it but others thought a white mix would be better. . The second time I used a white cake mix. The icing was a little loose even with draining the fruit so the second time I also added another 4 oz. of cream cheese and a small package of coconut. I made two 9 inch pans and split the layers. I then took a hint from the Coconut Poke Cake on here and poked small holes in each layer as I assembled and poured coconut CREAM over each before icing. Wow! The eight in the dinner party ate most of the cake! Will make many more times!

Marinated Flank Steak

Reviewed: Jun. 10, 2011
We have been using a recipe almost exactly like this for about 40 years! We use it on flank steak and also on chicken that we smoke. We use about 1/2 cup worcestershire, Ponzu (lemon soy sauce) and balsamic vinegar and no lemon. Sometimes we add a small can of pineapple juice also. We made up the recipe as young marrieds. First used it on beef kabobs. I think any combination of these ingredients would work. Love, love, love it!!!!!

Cottage Cheese Chicken Enchiladas

Reviewed: May 7, 2011
This is very good! The sour cream and cottage cheese really add alot. Used flour tortillas (our preference) Instead of canned red sauce I made a green sauce from this site. This will be the only enchilada recipe I use.

Baked Garlic Parmesan Chicken

Reviewed: May 7, 2011
This was wonderful! Our chicken breasts were so large we cut them in half - used crushed whole wheat crackers instead of bread crumbs. So Moist! Will make this again for sure.

Strawberry Coffee Cake

Reviewed: May 7, 2011
This is just as easy and good as other reviewers say! It was so delicate and moist - seemed like I had used a special cake flour. Three of us ate the whole thing before it cooled. Next time I will try to save some for the next day, since it is said to be even better then. Can't wait to try it with fresh peaches!

Chuck's Favorite Mac and Cheese

Reviewed: Feb. 24, 2011
I prepared this one and another from this site at the same time. The other was more complicated withmore ingredients and a sauce. This was by far so much better and much easier to prepare! We all loved it, including a 10 month old and 4 year old. I will definitely make this again. I may try whirring up the cottage cheese before adding just for the texture for the 4 year old who thinks he doesn't like cottage cheese. It's a simple, delicious way to make mac and cheese! *Also, for those who thought it was too dry, just add a little milk, and don't overcook. A very few people said it didn't have much taste -be SURE to use a really good cheese and grate it yourself - none of that pre-grated, tastless, packaged stuff! Makes a big difference! I usually use crushed crackers that we love on top for a little more zing.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 28, 2010
I have been using this exact recipe (from Nashville, TN) for over 25 years with rave reviews. I usually add chopped pecans to mine unless nut allergies are a problem. It is the most moist pumpkin bread I have ever had! I have also used this recipe for banana bread, substituting about 3 very ripe bananas for the pumpkin, with very good results.
