Grilled Salmon II

Made these tonight and they were soooo good! I got off work a lot later than I thought so they ended up marinading about 10 hours, and it was great! I added 2Tbs fresh dill weed (for 2, 4 oz pieces) and followed the advice of others and wrapped them in foil and put them on the grill. Fantastic. I will definitely keep the dill as part of this recipe.

Crispy Rosemary Chicken and Fries

I was really looking forward to this based on other peoples reviews, I was disappointed when the potatoes took 2 hours to cook, (even though I cut them into much smaller pieces than fourths) and we ended up eating dinner at 9:00 at night. I separated the chicken and fries into 2 separate dishes, because I did not feel comfortable cooking potatoes with raw chicken. I liked the idea of using fresh rosemary, and would like to give this another try but will give myself more time next time, and probably use boneless skinless chicken breast since we both just ended up peeling off the skin (and all the rosemary!) anyway.

Chicken Pot Pie IX

I've shyed away from making my own chicken pot pies, but my husband said, "My mom tried to make that growing up and it was terrible". So a couple months later I finally tried it, regardless. My husband loved it so much it he had 3 helpings, and said, "This is the best chicken pot pie I've ever had, I want more!" This will now be a keeper recipe. It was fun to make, and makes great leftovers.

Megan's Granola

First time making granola. This was really easy and fun to make. I added a 1/4 tsp almond extract and used raw wildflower honey, and real maple syrup. Accidentally baked it with cranberries mixed in but they're fine.

Extreme Banana Nut Bread 'EBNB'

I've made this twice now and both times it hasn't risen into a bread but rather sat there and bubbled until it gets dark. Seems like there is wayyy toooo much baking soda in this recipe. It has really good flavor but I am never doing this recipe again.

Steakhouse Black Bread

Fun to make, spent about $20 on all the flour and it got me to thinking I should just BUY a loaf of it! haha! But I bought all the stuff and made it, and now I'm going to have to KEEP making it to use all the ingredients up, but that's okay. Mine did turn out a bit dense. I'm a beginner bread maker.

Mini Pineapple Upside-Down Cakes

I used Large Porcelain Ramekins and they were perfect size. I wish I had more of them. I also suggest serving these right away, and in the ramekins they are the perfect individual size, and I don't really feel the need to turn them upside down, so it will keep more of the sauce. Used Pineapple cake mix, and water instead of pineapple juice. Next time I will pass on the Marachino Cherries. Read the label and they are FULL of sugar and high fructose corn syrup. The cake mix I can deal with for the convenience. :)

Tomato Chicken Parmesan

Loved this! I used boneless skinless chicken tenders and I loved it so much more than the chicken breast. It makes the portions more reasonable and easier for leftovers. It also absorbed more flavor with the smaller portion of meat. Served over angel hair, and used 1 3/4 cans of marinara sauce to use it up, and I'm glad I did because we still have leftover noodles, but no chicken or sauce left. I also used thick slices of Mozzarella to top it with and sprinkled it all with Parsley to give it more color.

Jamie's Cranberry Spinach Salad

Pretty good. We added Jalapeno Lime shrimp from the grocery store Seafood Dept for some protein. It was still missing just a little something though, and I can't quite put my finger on it. A good place to start, and I want to keep looking around for one more ingredient to tie it all together. I'll have to look in the custom versions.

Sweet Cornbread Cake

I made them into corn bread muffins to serve with some bar b que. I added a little more sugar than it called for and next time I will add even more. I also want them to taste more "corny" (haha!) so I will up the cornmeal as well. But a very good place to start, wayy better than all of the other ones I have tried. Good texture, just needs more flavor.

The Big Easy Jambalaya

Too spicy to eat, but it was kind of like an empty, flavorless spice which didn't make it worth pushing through the pain to eat it. I was really looking forward to trying something different and making a new tradition out of making this, but now I'm like, I'm glad I gave it a try (especially during Mardis Gras Week) but I will not be making this again.

Country Fried Steak

The crackers were a great addition rather than just plain flour. I crunched them to about dime sized pieces and afraid they were going to be too big. But to my surprise, they really helped to add a crunch to the steaks that I have been wanting. Loved the seasoning. I punded the steaks again before dredging them, and I think it really helped for them to be so tender. Thoroughly loved!

Tater Tot Bake

Made this for my husband, it was one of his childhood favorites. I havenever even heard of it before, so I really appreciate you putting it on here. It's great for one of those, "we have nothing to eat and I don't feel like going to the store" nights, but I just felt so unhealthy after eating it, it will be a while before I make it again.

Manicotti Alla Romana

Loved this. I made Manicotti for the first time and it was really fun! Like others, I used 1/2 ground hamburger and 1/2 sausage and was happy with that. Next time, I will probably cut the spinach just a bit and add just a touch of mozzarella cheese to make it a bit more stringy and "ooey gooey". Definitely a keeper recipe.
