We really enjoy this. It's a great recipe when I'm trying to find something last minute to eat. Here are my modifications: I use black beans instead of Kidney, and I first cook the onions, then add the can of tomatoes, then add the beans in with them (along with seasonings) then I add the rice at the end and mix everything together. I let it heat up and then I add the cheese directly over the top of the pan and I cover with a lid and eat once it's melted. It's less time consuming, and less mess. I think it tastes better this way personally since the flavors are mingled together. Delicious recipe though, one of our favorites!
