Slow-Cooker Corned Beef and Cabbage

Followed recipe exactly and it was the best corned beef I've ever made. I don't know what it is... perhaps the layering of the veggies underneath with the water, and the beer poured on top. All the veggies were perfect, not mushy, and they tasted good. I was hesitant to cook it on high (instead of low) for 8 hours, but it was wonderful! The cabbage was perfect too.

Mulligatawny Soup I

Delicious! I pretty much followed the recipe except I used more chicken stock (used a 49 oz can). I added a little more curry powder because of that, and I added a bit of basil to it to sweeten it up a bit. I used 2% milk instead of cream. It was so good. I eat this soup at a local restaurant regularly and this was just as good. Yum!

Superfast Asparagus

So awesome! I never knew roasted asparagus was so easy. I was shocked that in ten minutes they were cooked, and not still crunchy. They were perfect. I used salt, instead of cajun seasoning because i have a 4 year old. A+!

White Bean 'n' Ham Soup

So delicious. Only difference I made was using chicken broth instead of water. I added some garlic powder too. Really good. Next time I will make double this recipe so we can have leftovers.

Penne with Eggplant

Really yummy. I ended up making it a little different, but used this as my base recipe and it was really good. I just used jarred tomato basil sauce and diced sun dried tomatoes because that's what I had. Also added onion and zucchini. Delish!

Creamy Chicken on Linguine

So good. Made it just as recipe suggested but used less chicken (only 3 of us) and it turned out awesome! It didn't thicken very much but I let it cook down for a while and it thickened up nicely. Really tasty though. Yum!

Cheesy Beans and Rice

We really enjoy this. It's a great recipe when I'm trying to find something last minute to eat. Here are my modifications: I use black beans instead of Kidney, and I first cook the onions, then add the can of tomatoes, then add the beans in with them (along with seasonings) then I add the rice at the end and mix everything together. I let it heat up and then I add the cheese directly over the top of the pan and I cover with a lid and eat once it's melted. It's less time consuming, and less mess. I think it tastes better this way personally since the flavors are mingled together. Delicious recipe though, one of our favorites!

Garlic Green Beans

Simple, and delicious! Yum! I used butter instead of olive oil so they'd be extra rich. Salted the water. Only had to cook for aobut 5 minutes to be al dente. Also added some lime pepper, and a little more pepper than called for. Adding bacon would be awesome too.

Katie's Chicken and Broccoli Pasta

I really liked this. I made a few additions. I added onions. I buttered and tossed the noodles before adding everything else. Just gave it a little extra flavor. I added parmesan too. My husband really enjoyed it. It's a nice fresh pasta, not too heavy. Perfect for a hot summer day.

Cauliflower with Dijon Sauce

Very good! I made it a little more difficult though. I boiled the cauliflower for about 15 minutes then transferred it to a baking dish and baked at 350 with the cheese on top and it was perfect. All melty and delicious. I used about half of the dijon and mayo that is suggested, but it was a small cauliflower.

Pan Fried Swiss Chard

Red Garlic Mashed Potatoes

I used a hand masher. I omitted the sugar. I only had 5/6 potatoes so I used half the butter and half the cream that is suggested here. My daughter who has never liked mashed potatoes, ate these right up! I think these will become a regular dish here!

Not good. I used cream of broccoli soup though, so maybe that is where I went wrong. I am normally a casserole lover, and this just didn't cut it for me.

Sloppy Joes II

Delicious! Just as good as Manwich. I didn't have any green bell peppers, so I just doubled the onions and it was really good. I followed the recipe exactly but did end up adding a tiny bit of water. I am seriously surprised at how good it was.
