My organization had a 50's-60's Sock Hop and we had a casserole contest. I searched for casserole recipes and found this one sounded really good. I made it but for 32 people. I won 2nd prize. It was a big hit. Everyone loved it including my family when I brought them the little dish i had left. I will make this again and again. It is now in my favorites collection.

Baked Omelet Roll

I made this omelet this morning. Wow!!! It was awesome. I made it for 1 person and it came out perfect. I used 1 egg, 1/8 tsp of both salt and pepper, 2 tbsp & 2 tsp fat free milk, 1/4 tsp onion powder & garlic powder, 1/4 tsp pasley flakes, 1/4 tsp Mrs.Dash seasoning, 1/2 tsp flour, cut up 1/2 piece of small ham steak, a few chopped onions, and put in a blender then shredded 1/4 cup fresh chedder cheese and put aside the cheese. I lined an 8x8 glass pan with parchment paper, put it in a 425 degree preheated oven and baked for 15 minutes. At 10 mins in the oven, I added the cheese on top and finish baking for 5 more mins. It came out perfect and rolled with unbelievable ease onto a plate. I then proceeded to consume it. Wow, it was delicious and so easy to make. I will definitely be making this one again. Even though I downsized to 1 person, it came out perfect. It is a versatile recipe that you can use anything you have on hand. I have to give this one 5 stars.

Pineapple Cream Cheese Frosting

This icing was so easy and quick to make. I didn't need the entire recipe as I just wanted to more or less drizzle on the Bundt cake. So I halved the recipe but added the entire 8 oz of Cream Cheese. I wanted a cream cheesy taste and I also added 4 TBLSP of Lemon Juice to cut back on the sweetness as I didn't have Lemon Extract on hand. It was the right consistency for drizzling, not too thin and not too thick and after I drizzled it on the cake, I added some crushed pineapple to give it some color. The flavor was just wonderful, not too sweet and not too pineappley.By the way, the cake itself, was Carrot Cake IV submitted by Cookie and the cake was superb also. I will use this frosting again.l

Eclair Cake

I have to bake the desserts at least twice a month for my local VFW where we serve dinners every Saturday. I made this and followed some of the reviews that said to soak graham crackers in milk first. I was glad I did this. Also used French Vanilla pudding and did use prepared frosting. I did make it the day before and refrigerated it over night. This was so easy to make and I got rave reviews from everyone. It was awesome. Everyone loved it, even those that don't like sweets ate it and they loved it also. It held together great and wasn't soupy at all because I made the pudding first before adding the whipped topping as someone suggested. I will make this again many times since they all loved it so much. Because of the number of people who have dinner, I made 2 batches and both came out perfect. I will definitely make this again and next time I will make one to keep at home. It was so easy to make. Thank you to the person who submitted this recipe. It is a keeper!!!!

Italian Dressing Mix

I made this today and just had to try it out. I was preparing an Italian Pasta salad for tonights dinner and it required Italian dressing. I didn't have any so I found this recipe. I followed the ingredients exactly but omitted the salt and substituted garlic powder for garlic salt and also onion powder for onion salt and celery seed for celery salt as other reviews suggested. I didn't have any thyme so I added 1/2 tsp Italian Seasoning because that has thyme in it. This was just awesome. I will never buy bottled Italian dressing again. I tested it out and had a salad for lunch and used this dressing. I didn't even need to salt my salad at all. It was perfect. WOW!!! This recipe is a keeper. Thank you for this recipe.

Cocktail Meatballs

I work a the VFW in my area and I worked Christmas day. Was looking for something to make that was easy to make to bring in to work so people would have something to eat. It was part of a buffet we had. It was a great hit and was the only dish that was empty. In no time at all, everyone was asking "where are the meatballs?" They were gone!!!! I made it exactly as the recipe called for and they were just great. I will make these again and again. Everyone raved about them and kept asking who made them. They were so easy to make. I did use frozen meatballs tho as I was pressed for time. I could have made them that morning but wasn't sure how easy they were so I made them the night before and palced them in a crock pot and left them on low over night. The cranberry sauce was much better than a recipe I used before with grape jelly. They weren't as sweet. This recipe is a keeper for me.

Wave Your Flag Cheesecake

This is one of the easiest cakes to decorate I have ever made. I brought it to my local VFW and got rave reviews. I told them to make sure if there was any left that it needed to be refrigerated. When I went to help clean up, there was non left. I was so happy everyone liked it. Will make this one again.
