I don't typically comment on recipes, though I get quite a few from this site on a regular basis. This is an incredibly easy and wicked good recipe! My rendition was probably a little higher fat because I used what I had on hand, however, I can imagine it would taste just as good with the low fat options. The things I changed a bit: I used a whole cut up chicken instead of breasts (I think the bones help add flavor to the stock), skipped the whole peeled tomatoes and substitued a can of Rotel instead, and I used frozen corn in place of canned (I am not a fan of squishy corn). Otherwise I stuck to the recipe - EXCELLENT JOB AUNTTAF - it was a HOME RUN with the family! This one is a keeper and going into the weekly rotation! :)
