White Bean Breakfast

This is delicious! I added kale, which was an excellent fit with the white beans/herbs/lemon flavours. (Use about 4 cups, washed, stems removed, and chopped, and add to the garlic in the pan. Volume reduces by about 75%.) Toast is optional, in my opinion.

Butter Flaky Pie Crust

Bermuda Spinach Salad

This was a delicious salad. I would make some changes next time I make it, though. It needs more crunchy vegetables...celery, bean sprouts? I used half the amounts of onion and sugar in the dressing, and it was excellent. I highly recommend it.

Morning Glory Muffins II

I used half whole wheat flour, skipped the coconut, chopped the apples and substituted 1/2 cup of honey for the sugar. They turned out beautiful and tasty. Four stars because the recipe as written would have been much too sweet, especially with the naturally sweet carrots, apples, and dates.

Sweet and Crunchy Salad

This is delicious! I'm a little leary of what's in the seasoning packages, so I left them out of the dressing and substituted about a tablespoon of high quality soy sauce and a half teaspoon sesame oil. I added some bean sprouts to the coleslaw as well. When I make this again, I may try it with romaine instead of coleslaw.

Squash Braid

The recipe as written needs more salt. I doubled the salt to 1/2 tsp, used salted butter and leftover squash that had some salt in it too. If I use unsalted butter and squash, I would probably put close to a tsp of salt in the bread. Otherwise it's a great recipe.

Applesauce Brownies I

I altered the recipe a little. I cut the flour down to 1.5 C, and used 1/2 a cup of cocoa. I skipped the cinnamon and nuts (I like them, but my family doesn't). The result: Five star chocolatey taste. The texture was a little springy, as you'd expect of a lower fat recipe, but very moist. It held together better than other cakey brownies I've tried.

Really Creamy Fettuccine Alfredo

I added chicken, spinach, onion and peppers to this for added colour, texture, and nutrition (as if anyone who makes this cares about nutrition...). I used no milk because of all my added veggies, and I also added a bit of lemon juice for a bit of "spark". And of course, I used butter, not margarine (the very idea!). Very good.

Uncle White's Bread Machine Rolls

I replaced 1 cup of flour with whole wheat, used only one tablespoon of (white) sugar, and used a whole egg. This made eight of the best hamburger buns I've ever eaten. Highly recommended!

Surprise Cinnamon Chiffon Cake

Caramel Frosting I

Beautiful consistency - firm, yet creamy. I poured it on a rhubarb sour cream coffee cake, and the super-sweet frosting balanced nicely against the tart rhubarb. The amount was perfect to pour over a cake baked in a 10" tube pan.

Very easy and very very good. My only problem with these is how sweet they are. (With the butter, sugar, and eggs they taste quite a bit like butter tarts, and they're that sweet, too.)

Whole Wheat, Oatmeal, and Banana Pancakes

These are excellent and so healthy. If only my 2-year-old did not insist on "dipping sauce" (syrup) I would make these for him every day. I usually use more than one banana. If your bananas are ripe, you will probably not want to use the full amount of sugar. Don't skip it altogether, though, because it does affect how crispy the pancakes turn out. Today I didn't have an egg to put in, so I made a "flaxseed egg" using 1 tbsp. ground flax, 3 tbsp liquid. It worked fine. Oh, and I never seem to have milk powder in the house, so I always skip that.

Beghrir (Moroccan Pancakes)

Wow! These are tasty, beautiful, and fun. I made these as written, except that I omitted the orange-flower water from the sauce (I didn't have it in the house). The only change I would make next time is to cut the salt just a tad. My 2-year-old loved watching the lacy pattern emerge (though he was not quite so enthusiastic about the taste as I was).

Tasty Tuna Burgers

Very tasty! I used regular bread crumbs and added some basil to the mix. I also skipped the chili sauce and dill and added a bit of dijon. It is a very soft mixture. I recommend coating the patties with cornmeal and refridgerating them before cooking. I cooked them on a George Foreman grill, which worked very well.

Basil, Roasted Peppers and Monterey Jack Cornbread

This is probably the best cornbread I've ever eaten. I actually baked it in a 6-quart crock pot for 2.5 hours. (Just butter the inside of the crock pot and put the batter directly in.) I didn't put in the frozen corn. I substituted about a tablespoon of dried basil for the fresh. Don't skip the basil, it gives it wonderful flavour!

Excellent! I did add a bit of salt to the batter (instead of just sprinkling it on later). I may try it with a bit less flour sometime, just to see how it makes it different, but these are good as is, too.

Honey Oatmeal Bread II

This bread has the most amazing texture because of the oats. It's also quite sweet and has a strong honey flavour, so it's excellent served with butter or peanut butter, but not cheese. I've also made it with 1/4 cup of honey instead of 1/2 cup, and it was still sweet, but with less honey flavour. I don't put the honey/oatmeal topping on it. Instead, I wet the tops of the loaves and sprinkle oatmeal on them before baking.
