Cheesy Potato and Corn Chowder

This is one of my new favorite recipes from this website. I have been looking for a corn chowder similiar to a local restaurant and now I have found it! I made the following changes: I omitted the chilies, cut down on the onion, added two cans of corn & one can of cream corn and used 1 cup of milk with 1 cup of heavy cream. At the last minute I threw in some shredded chicken breast from a rotisserie chicken from the grocery store (it still would have been good without that) I also used Yukon Gold potatoes in this recipe. This was to die for! Enjoy!

Spinach Tortellini Soup

This soup is so delicious and easy! I also add 2 cans of stewed tomatoes and used fresh garlic instead of powder. I also add chicken broth or extra water when the soup gets too thick and it will! This soup is great with a sandwich or all by itself. I have also doubled/tripled the recipe for parties. I made it for my son's first birthday and it was a huge success. Don't forget to add parmesan cheese when serving. Enjoy!

Cheesy Chicken

This was simple and tasty. I had all the ingredients so I threw it together. You want to use two cans of cream of celery soup, a little more shredded cheddar with a little more croutons on top. I didn't really measure; I just threw all the ingredients on top of the chicken and covered it with foil. It came out pretty tender.

Bagel and Cheese Bake

My family enjoyed this recipe. I added 2 extra eggs, left out the onion, and added extra cheese to the top towards the end of baking. I also added the crumbled bacon on top at the end of baking (we like the bacon crisp.) When I cooked bacon inside the casserole, I notice it gets chewy. I cooked it at 350 for 45 minutes...it came out perfect!

Italian Eggplant Salad

I had this recipe at a friend's house. She served it with crackers as an appetizer. I love eggplant so I enjoyed this recipe. I then got the recipe from this site and made it as a side dish with salmon.

Hens with Apricot Rice Stuffing

I have this recipe and I have been making this for a few years now. The apricot rice with pecans has a wonderful flavor. I don't use mushrooms; however, my recipe calls for celery sautéed in butter instead. My family loves this!

Chicken Breasts Stuffed with Crabmeat

I loved this recipe! I kept the chicken semi-frozen when I cut the chicken to form pockets. The chicken then thawed and I stuffed the cream cheese & crab mixture (which I did double.) I also browned the chicken for 5 minutes or so. I then baked it on 350 until the juices ran clear. This tasted fantastic!

Kids' Snack

I needed a snack for my child's class. This did the trick. I substituted the chocholate morsels with M&M's (less messy.) I also added pretzels to the mix. It made enough for 20 children in a plastic sandwich bag. Good Stuff!

Barbecued Beef

This was fantastic! I followed the directions for the most part. I used a Beef round bottom roast and added 1 chopped onion and 1 diced green pepper which added lots of flavor. I didn't have that smoked sause. I also cut the meat into bite size cubes before I added it into the crock pot. The cubes came out extremely tender and pulled apart as well. If you take the lid off for the last two hours of cooking, you will find that the sause thickens and you don't need to make extra sause like others have said. Mine turned out perfect. I served this dish over rice for my children and my husband and I ate it on a Kieser roll. Please try!

Slaw-mmin' Wraps

This was a great wrap recipe. I love hummus, so I was looking for a recipe with hummus in it. My husband and oldest son really liked it. I cut back on the amount of garlic and left out the onions. Other than that, I followed the recipe as written. It made enough hummus that I kept extra in the refrig for future use.

Great Chicken Salad

This was really a good recipe for chicken salad. I used the meat from a store bought rotisserie chicken which made this recipe really easy. I put the chicken alone in the food processor, placed the meat in a bowl and then added the rest of the ingredients. It made a good amount. I adjusted the amounts of mayo and dressing to taste. Great on sandwiches or even by itself!

Coconut Tilapia with Apricot Dipping Sauce

This was really good. I followed the recipe as is. The second time I made this I utilized a set of tongs for coating the coconut. Doing that made less of a mess on your hands. You could probably make this using shrimp.

Bread Bowl Fondue

This dip was pretty good. Next time I will use my small crock pot to keep it warm. While the bread bowl gives it a good presentation, the dip is much better served warm.

Grilled Tilapia with Mango Salsa

Baked Shrimp with Feta and Tomato

We really loved this dinner. I used both one can of diced tomatoes and a container of grape tomatoes-halved. I increased the vermouth slightly to have more sause. I also added more feta because we love it so much. I also made it with 2 pounds of large shrimp and served it over orzo...loved the orzo/feta/tomato combination!

Slow Cooker Beef Stew I

A very easy beef stew recipe. I followed the directions as written (I doubled the incredients though.) For those of you who like a thicker gravy, take the lid of the crock pot for the last 45 minutes to an hour. It seemed to thicken up just enough.

Crispy French Toast

For some reason I do not have much luck with the French Toast recipes that you bake. They come out either too soggy or too dry. My family had something like this in Jamaica for breakfast and it was always so good. I tried making it for breakfast on Christmas morning and it wasn’t all that great. It was o.k. but I won’t make it again.

Baby Back Ribs

I have been making these for a few years. Easy and delicious! I marinade them overnight in the foil using Sweet Baby Ray's regular and honey BBQ Sause. Towards the end of baking, I open the foil, drain the liquid and then pour more BBQ sause ontop. I then broil the top for a few minutes. Yummy!
