Hearty Pasta Tomato Soup

This soup was pretty awesome! I cooked this soup on the stove top. The changes I made were the following: 1. I did not use onion (personal preference.) 2. I cut the sausage in slices before sautéing it in EVOO. 3. I added on can of hand held Creamy Tomato Soup (to thicken it up-and to add flavor) Without the creamy tomato soup, the soup had a slight watery consistency. I prefer it a little thicker. Enjoy!

Banana Crumb Muffins

Great recipe for banana muffins. The topping is delicious. Next time I would make a little more topping and maybe add chocolate chips to the batter. Good stuff!!!

Artichoke Chicken

I think this would have been better if I cubed or shredded the chicken breasts. Overall, the topping was terrific with the artichoke/mayo/sour cream/parm cheese combo. I also added marinated roasted peppers (chopped) to the topping. My picky kids thought it was just o.k.

Salad Pizza

I make this using Pillsbury Pizza Dough crust-make it first. Then top with bagged spring salad mix tossed with a simple balsamic vinegar/olive oil dressing. I add halved grape tomatoes, crumbled feta, and sliced olives. I also add a little parm/romano cheese on top. Very good!

Chicken In Sour Cream

I personally was not a huge fan of this recipe. I used chicken breasts and served it over butter noodles. It was just o.k. I gave it three stars because my youngest son ate the whole thing!

Great Chicken Salad

This was really a good recipe for chicken salad. I used the meat from a store bought rotisserie chicken which made this recipe really easy. I put the chicken alone in the food processor, placed the meat in a bowl and then added the rest of the ingredients. It made a good amount. I adjusted the amounts of mayo and dressing to taste. Great on sandwiches or even by itself!

The Best Meatballs

I finally found a traditional style Italian meatball recipe that taste wonderful. I normally would throw together nonspecific amounts of ingredients to make my meatballs thus making them taste a little different each time I made them. This one is a keeper. I used ground beef only and substituted ½ cup of milk instead of water. I make these often!

Crispy French Toast

For some reason I do not have much luck with the French Toast recipes that you bake. They come out either too soggy or too dry. My family had something like this in Jamaica for breakfast and it was always so good. I tried making it for breakfast on Christmas morning and it wasn’t all that great. It was o.k. but I won’t make it again.

Cheesy Chicken

This was simple and tasty. I had all the ingredients so I threw it together. You want to use two cans of cream of celery soup, a little more shredded cheddar with a little more croutons on top. I didn't really measure; I just threw all the ingredients on top of the chicken and covered it with foil. It came out pretty tender.

Chicken Breasts Stuffed with Crabmeat

I loved this recipe! I kept the chicken semi-frozen when I cut the chicken to form pockets. The chicken then thawed and I stuffed the cream cheese & crab mixture (which I did double.) I also browned the chicken for 5 minutes or so. I then baked it on 350 until the juices ran clear. This tasted fantastic!

Coconut Tilapia with Apricot Dipping Sauce

This was really good. I followed the recipe as is. The second time I made this I utilized a set of tongs for coating the coconut. Doing that made less of a mess on your hands. You could probably make this using shrimp.

Addictive Sweet Potato Burritos

We loved this recipe! I used two cans of refried beans and one can of red kidney beans, used 1/2 cup of water only, left out the cayanne pepper and pretty much followed the recipe as written. I served it with sour cream and salsa on the side. It made about 12 burritos-I was able to freeze 1/2. Enjoy!

Shredded Beef for Tacos

This was pretty good. I used a frozen rump roast and followed the directions as written. I added 1 jar of salsa with the rest of the ingredients and it came out delicious. I used it for tacos one night and then for enchiladas another night. I was even able to freeze some too.

Bagel and Cheese Bake

My family enjoyed this recipe. I added 2 extra eggs, left out the onion, and added extra cheese to the top towards the end of baking. I also added the crumbled bacon on top at the end of baking (we like the bacon crisp.) When I cooked bacon inside the casserole, I notice it gets chewy. I cooked it at 350 for 45 minutes...it came out perfect!

Cheesy Potato and Corn Chowder

This is one of my new favorite recipes from this website. I have been looking for a corn chowder similiar to a local restaurant and now I have found it! I made the following changes: I omitted the chilies, cut down on the onion, added two cans of corn & one can of cream corn and used 1 cup of milk with 1 cup of heavy cream. At the last minute I threw in some shredded chicken breast from a rotisserie chicken from the grocery store (it still would have been good without that) I also used Yukon Gold potatoes in this recipe. This was to die for! Enjoy!

It's Chili by George!!

This was an excellent recipe for Chili. I have been making my mother-in-laws recipe for years so I thought I would try something new. I added canned diced tomatoes and a little more suger than suggested; otherwise, I didn't change a thing. My family does not like things too spicey, and this recipe had a bite to it. I would use less cayanne pepper and chili powder next time.
