Lime Cilantro Rice

Wow!!! How super easy is this!! I didn't really measure what I was putting in, so it was just the juice of one lime (that seemed to be really, really juicy). Omitted the lime zest. But, it was SOOO easy and VERY good. I didn't add the tablespoon of margarine in with the rice, and I felt the rice was lacking a flavor, and that was it. I will make sure to do that next time (got the wife's permission to do so; normally, she doesn't like that in anything). Will make this again in a heartbeat!!!

Chantal's New York Cheesecake

Wonderful recipes. I made this in our Vitamix blender to get the batter done, and it came out wonderful. Instead of the graham cracker crust, I used a cup of almond meal. I probably needed more than a cup (I'll possibly even double it next time to give it a slightly thicker crust), and I needed more than the 2 tbsp of margarine. That needs work. But, the cheesecake itself came out wonderful. I left it in the oven for 5 hours after I baked it, then fridged it overnight. It was wonderful. Will make it again.

Peanut Butter Bars I

What an unbelievable recipe!!! This was SOOOO easy to make, and it was incredibly good. I didn't have graham cracker crumbs (pre-done). I used my amazing Vitamix and it used about two packages of graham crackers ground up. Each package seemed to make one cup of crumbs. Will make this again and again. This is going in my cookbook, for sure!!! The only thing that confused me on this recipe is the serving of 12… This made WAY more than 12 bars. To get 12 bars, you would have to cut these into enormous bars… I made decent size squares and it came out to be about 42 squares.

Twelve Minute Pasta Toss

This was spectacular. Like someone else mentioned, I used sun dried tomatoes that were already in oil, then used the oil as the oil to cook with. Other than that, didn't change anything on the recipe. At first, I was concerned about it being dry, but if it was a tad dry, it still had tons of flavor so that it didn't matter. Everything was flavorful. It was spectacular!!! Will keep this and make it again!!

Healthy Garden Salad

This was a HUGE hit!! This was absolutely wonderful. I loved this salad. I made it exact, but I liked the suggestion of adding red onion. I will do that next time. I might add some more veggies too, like zucchini. But, it was spectacular and I've now added it to my cookbook!!!

Black Bean, Corn and Turkey Chili

This was spectacular and SUPER easy. My wife is vegetarian, and so instead of turkey, I used Morningstar crumbles. Couldn't tell a difference (well, kinda; ground turkey still would have been better) ;-) But, otherwise, didn't change a thing. It was wonderful. My one year old loved it, too. WIll make it again in a heartbeat!!

Lower Fat Banana Bread II

Absolutely amazing recipe. We made a few minor adjustments, which actually made it healthier. We substituted brown sugar for white sugar, and instead of a cup and 3/4 of flour, we used 1 cup of whole wheat flour and 3/4 cup of white flour. It came out spectacular. We added a touch more vanilla, too, and we upped the bananas to 3. It was a great recipe. Will make it again (in fact, we're making a second loaf tomorrow).

Slow Cooker Chicken with Mushroom Wine Sauce

Great Recipe!!! Easy to put together, and it tasted great. My two girls loved it. Need to find a way to make the sauce a hair creamier to put over rice. But, otherwise, it was spectacular!!!

Spinach and Orzo Salad

Turned out great. As per someone else's suggestion, we added marinated artichokes chopped up and chopped olives, and it added to the flavor. It was spectacular. I might add more veggies to it to make it even healthier, but it was a great salad.

Pat's Baked Beans (vegetarian version)

This recipe is absolutely fabulous. I omitted the bacon and the garbanzo beans (since garbanzo beans just don't seem right in baked beans) and doubled the pinto beans to compensate. I've made this a few times. It's wonderful. Moved now to my cookbook.

Apple Dip

SUPER, SUPER easy and SOO SOOO good!! I used light cream cheese to make it less fattening (not totally healthier because you can't get healthy with that amount of brown sugar) and doubled it. I sliced up a ton of apples, brought them into work with the dip, and it was wonderful. Piece of Advice: Use the more tart apples to dip with. The sweeter ones just overpower everything. The tart and the dip compliment each other nicely.

All-Day Apple Butter

This was so easy, yet so difficult. Difficult in making sure I start this at a time where I can deal with it the rest of the day. Easy because it was super easy. Started it at 9 in the morning, and was able to jar it by 7:30 at night. I did modify the recipe slightly. Instead of the various spices, I cheated and just used about a tablespoon of Pumpkin Pie spice (key word is about; i just started sprinkling it all over the top), and I cut the sugar in half and used brown instead. I used all kinds of Apples: Mostly Granny Smith, but some Pink Lady and some Fuji as well. This gave a very interesting and VERY tasty blend. I will TOTALLY do this again next fall. We have a place called Apple Hill near the Sacramento area where we get nice, good apples. I will look forward to possibly making this a tradition!! UPDATE: Easy solution... Start this the night before. Let it cook overnight. 1. You don't have to worry about the timing as much, 2. It makes the whole house smell wonderful as you wake up in the morning.

Apple Matzo Kugel

Wonderful!!! All the recipes I used to have for this used a dozen eggs and a lot of sugar. This was a lot less, and it was great to make!! I doubled it and put it into a 9x13 pan. Came out wonderful!!!!

Cucumber Salad I

Pineapple Carrot Salad

This was super easy and great. I couldn't find Pineapple yogurt, so I used Piña Colada yogurt instead. I also omitted the sugar because I thought it was unnecessary. I'll make it again and again.
