Classic Bran Muffins

YUMMY!!! Here's what I did: I used non-fat coffee rich with 1 T lemon juice instead of buttermilk (I wanted them to be non-dairy), used 1/3 c applesauce instead of the oil, 1/2 c white flour & 1/2 c whole wheat and increased the vanilla to 1 tsp. I used craisins instead of raisins and I also added 1/3 apple chopped and 1 mashed banana. I used All Bran cereal for the bran. I also replaced some of the brown sugar with splenda and added a squirt of honey. The muffins are amazing. I got 18 smallish ones from the batch. I never realized "healthy" muffins could taste so good!! I can't wait to make these again. I think I will cut down on the sugar because the fruit added so much sweetness. I will also try some of the other variations reviewers have posted. This seems like a fun recipe to play around with.

Lighter Banana Muffins

Wow- these are incredible!! I used 4 bananas as suggested and added 4 oz. unsweetened applesauce, 1 t. vanilla, 1 t. cinnamon and some chopped walnuts. I filled the muffin tins up halfway and got 23 small muffins. I just ate 2 fresh out of the oven and they taste just as good as bakery muffins. I can't wait to make these again!!

Campfire Green Beans

Thanks for this easy recipe! I'm not an outdoors person so I can't comment on how these would taste over a campfire but they made a great indoor side dish for me. I used canned beans as suggested but I think I will try frozen ones next time because I like green beans crispier. Even with canned though, this was delicious!

Apple Crumble Pie

This is delicious and so easy. I use a bought pie crust and it takes only a few minutes to assemble the rest. I've made this 3 times in the last month and it's always been a hit.

Vegetable Lo Mein

Delicious! Vegetable Lo Mein is my regular order when I get Chinese and I've always wanted to make it at home. This doesn't taste like the stuff from the Chinese Restaurant but it's good just the same. I used Kame Lo Mein noodles (sort of like a wide, flat spaghetti). I'd like to try it again with some different vegetables for variety. Last time I made it I added some chopped broccoli which was great. Thanks for a wonderful recipe!

Bread Machine Challah II

Excellent recipe. I've made challah in my bread machine before using the recipe that came with the machine but this is so much better. I use High-Gluten flour which I find makes it nice and dense. It's a huge hit in my house! Thank you!
