Sam's Famous Carrot Cake
I am not really sure about this one. I have made loads of other carrot cakes before and none have come out like this one. Texture is really dense and heavy. Very oily also. Flavor very bland even though I added ginger, nutmeg, clove and cardamon. If I made this again I would cut my oil with applesauce, use brown sugar, up the cinnamon, omit the coconut. Going to frost it with cream cheese frosting and hope it will be better. Disappointing at best.

Fireman's Apple Pie
I love this recipe. It is very simple and easy. I add to the batter a tsp. vanilla, nutmeg, and ginger. I thinly slice my apples and only fold in about a 1/4 into the batter. The rest I layer on top and brush with milk and then sprinkle with cinnamon and sugar. So yummy!

Biscotti Toscani
I have attempted making biscotti before, but was never happy with the results, until now. These are wonderful biscotti with excellent texture and taste. I did change a few things. I added 1/2 tsp. instant espresso to the mix and decreased the almond flavoring to 1/8 tsp. I also mixed in 1 c. chopped dark chocolate and topped them with almond slices. Very yummy, I plan to serve them with home made vanilla ice cream
