Mississippi Tea Cakes

My husband always mentioned how he liked Tea Cakes so I used this recipe as my first attempt...LOVED IT! I didn't have buttermilk so I used milk/lemon juice substitute. Will become one of my go to desserts now!

Simple Beef Stroganoff

I made this last night with the following changes: ground turkey, fresh garlic, and 1/2 soup can of low fat milk...it was delicious! My family really loved it! It was quick and easy and will definitely be a staple in my home.

Incredibly Cheesy Turkey Meatloaf

Very good! I let the bread crumbs sit in the milk as suggested in another review, added about half an onion and worcestershire sauce, and used 2% milk.

Sweet Potato Pie III

Husband wanted sweet potato pie for Christmas so I went with this recipe but tweaked it as follows: 4 big yams (unscaled recipe called for 6 but when we were shopping, we were looking at a different recipe); used nutmeg instead of cinnamon and ground allspice; nixed the salt. The pies were an absolute hit! Sent some to mother in law and she called and said she loved it.

Tasty Collard Greens

Never made collard greens before but based on the reviews, I decided to try them. I ambitiously made this for Christmas. One word "WINNER!". My husband, who loves southern cooking, LOVED them! My mom who loved my grandmother's (R.I.P) greens, said these were almost on par with hers...I know she'd be proud. I didn't use the red pepper flakes but it wasn't missed. Also, my husband added vinegar to one of the multiple servings he had and said it tasted just as good.

Mouse's Macaroni and Cheese

I don't think I'm writing a fair review because I tweaked this recipe (due to husband's preferences). I omitted the mustard powder and bread crumbs and used muenster and mild cheddar cheeses. It was VERY good! I will use this recipe again.

First time making cornish hens...made 2 for Christmas. DELISH! I accidentally bought Uncle Ben's Ready 90 minute Ready Rice so I added it just before step 2. Chicken came out moist and dressing is delicious.
