Artichoke and Chickpea Stew

I was looking for a way to use leftover artichoke and found this recipe. I used canned tomato, chicken oxo and water. I also added about 2 cups of spinach and extra garlic. I'm a big slat lover so I used a more oxo at the end to get the flavour I wanted. I wasn't all that impressed with it the night I made it, but the next day it was really yummy.

Chocolate Chip Shortbread Cookie Logs

I decided no to make logs -- just regular shaped cookies and I only had regular sized chocolate chips so I just chopped them up a bit and they were fine. I skipped the whole dipping step. The entire family LOVED them. They melted in your mouth. This one will definately go in my recipe box!

Glazed Meatloaf I

I don't eat meat, but I made this for my husband and son and they both loved it. I used whole wheat bread and lime juice instead of lemon juice as I had no lemon juice. Will definately make this again for the boys.

Cream of Asparagus Soup I

This soup is delicious! It tastes like something you would get in a really great restaurant. I had no condensed chicken stock so I used OXO chicken bullion powder, 5 tablespoons with 5 cups water. I topped with finely grated parmesan cheese. I highly recommend this recipe! Yum!!!

Coconut Curry Tofu

I'm giving this recipe 3 stars becuase it took SO long to make (washing, chopping and cooking veggies). I took the advice of other reviewers and sauted the veggies and tofu seperately. It was tasty, but as a few others said not a very strong coconut flavour. Also, couldn't find Chili Paste anywhere so I used Chili sauce? I had to add twice as much curry paste to give it a nice strong flavour. It was tasty but I don't think I'd make it again.

Grilled-Salmon Lemon Basil Cream

Okay, anyone can cook salmon so the sauce is the real recipe here...and it was delicious! I didn't have any lemon so I replaced it with more chicken broth. I used condensed chicken broth without diluting it. I was worried because it is LEMON basil cream but it turned out so well. We had it with grilled salmon one night and pan fried shrimp the next. Excellent!

Lower Fat Banana Bread II

I used this recipe to make muffins and I thought they turned out pretty well. They're almost as moist as regular but a bit more chewy. I used splenda instead of sugar, 3 bananas and I only had peach applesauce so I used it instead of regular. I also used 3/4 cup of whole wheat flower with one cup regular. I wasn't sure of the baking time so I went with 15 minutes and they were cooked perfectly. I will make these again.

Easy Broccoli Quiche

Great quiche recipe. I don't like when a quiche tastes too eggy and this one is perfect. The only changes that I made were to entirely omit the butter and I used pre-shredded, bagged nacho cheese (which added a nice kick). Oh, and I found I had too much egg mixture so I just filled the crust and tossed the rest. I will definitely make this again.

Goat Cheese and Arugula over Penne

This tastes really tangy at first, which could be good or bad depending on your tastes. I used spinach and regular onions and they worked well. The taste really grew on me. I had it for lunch the next day and thought that it reheated well. I just added a touch of milk before popping it in the microwave. I would make this again.

Artichoke & Spinach Dip Restaurant Style

Very easy. Very tasty. Makes a ton of dip and freezes really well. The second time I made it I added some salsa but I liked it much better without. This will be a staple for holidays and parties.

Alaska Salmon Bake with Pecan Crunch Coating

This is the best Salmon recipe I've ever tried. It's so easy. My husband loves it too. He's a BIG meat lover (I don't eat meat, only fish) but now this is his favourite meal. It's great to have found a recipe that we both love.

Raspberry Vinaigrette Dressing

I needed a nice salad dressing one night, had these ingredients on hand and decided to give it a try. Now I use it all the time. It's great as a dressing (I tossed it with fresh greens, rolled a chunck of goat cheese in bread crumbs and heated it the oven, dropped it in the middle of the salad and it was excellent) but I also use it all the time as a marinade for Salmon. My only criticism is the amount of sugar. I use about 1/2 the amount called for.

Cottage Cheese Roast

Yum, Yum, Yum!!! This is THE BEST vegetarian recipe I've ever tried. The cooking time was way off - I cooked it for at least an hour - but it was well worth the wait. It tastes EXACTLY like real meat loaf. My husband, a meat lover, thought it was delicious as well. Highly recommend it.
