French Breakfast Muffins

Pretty standard muffin recipe. I through in some oat flour and ground flax seed to make them a little more hearty for breakfast. Definitely make less of the topping and brush the muffin tops with a pastry brush -- less waste this way.

Best Brownies

Excellent! Only changes I made were to leave out the frosting and throw in a handful of Ghirardelli milk chocolate chips. Baked about 27-28 min and took them out. May not look all the way done, but when you let them sit to cool a bit, they finish cooking. This makes a tender, moist brownie -- very good!!! No more boxed mixes for us!

Salisbury Steak

I had high hopes for this after reading all the positive reviews (and I'm only giving it 2 stars because my husband said it was good), but there was something off about the sauce. The meat tasted alright though. Will not make this again - at least not without major tweaking.

Pistachio White Chocolate Chip Cookies

Overall a good recipe. Just needs about 1 cup of butter or shortening (not both, and not more than that!! Waaay too mushy then). Also, cooking time is more than 10 minutes. I needed about twice that just so they would firm up a bit. Other than that, a good recipe!

Chocolate Eclair Dessert

I LOVED this recipe! I took it to a Christmas party, and it was the first dessert gone, and the only one that was completely eaten! I did follow other reviewers advice and used the chocolate glaze instead of the frosting. Very good, simple and fast!

Sweet Potato Casserole II

Great recipe, but waaaaay too sweet for my family's taste buds. I made it with a third a cup of brown sugar in the topping and nothing but the eggs, vanilla, and some Smart Balance in the potato. It was plenty sweet -- and the family LOVED it! :)

Shepherd's Pie

This one one great, but it did need a little tweaking. I used cream of chicken soup (don't like mushroom), and cooked half of a chopped onion, couple cloves of minced garlic and about 4 tbs of Worcestershire sauce into the meat while browning. I also used frozen mixed veggies. Came out great, with requests for more!! All in all, good skeleton recipe, but definitely wiggle room to make some changes to suit tastes...
