Heads Up!
April’s Theme:  Find a recipe from your ethnicity or culture that you have never made before.  For example, I am Greek and I have never made dolmades (stuffed grape leaves), so I may try that this month.  Send a picture and a review to armonthlychallenge@gmail.com by April 30.

March’s theme was… Since 3/26 is "Make Your Own Holiday Day," the theme for March is to try a recipe that includes an ingredient that is so good, you think it deserves its own holiday.  Don't forget to email a pic/review to armonthlychallenge@gmail.com by March 31.

Holiday:  Bacon Day!
Why I Picked It:  “Bacon, especially crispy slices, is my favorite food!  I could eat it all the time and never be sick of it!  Breakfast, lunch, and dinner.  Now, they even have bacon in desserts!  It definitely deserves its own holiday.”

Bacon Cheddar Spread
Review:  Just tried this recipe, and I am glad I did!  Easy appetizer and very delicious. Once my guests actually tried it (because it doesn't look like anything special) they all devoured it. It was gone within a few minutes. I made a few small changes to this: 1) half a cup of light ranch dressing and half a cup of non-fat sour cream; 2) added diced onions instead of grated (which gave it a better, texture); 3) threw in garlic & onion powder, pepper, and sea salt; & 4) used 2-3 extra slices of bacon. I chilled this overnight and served the next evening w/ celery & cucumber slices. I will definitely use this again!

Holiday: Cinnamon Day!
Why She Picked It:  “If I could make a special holiday, it would be Cinnamon Day. I love the candy Hot Tamales, cinnamon toast, red candied apples, cinnamon cookies, cinnamon rolls, and cinnamon in yogurt.”

Jo Mama's Soft and Fluffy Cinnamon Rolls

Review:  My favorite recipe using cinnamon has to be Jo Mama's Soft and Fluffy Cinnamon Rolls. These rolls take awhile to make, but they are worth the wait. I do change the portion size on these rolls because the recipe states it makes 12 large rolls. The cinnamon rolls would be super large, so I downsize and make 24 rolls. Don't forget to make cinnamon rolls on Cinnamon Bun Day, October 4th.

Vanilla Yogurt with Ceylon Cinnamon
Review:  Now, in order to celebrate Cinnamon Day every week I love cinnamon in yogurt. Ceylon cinnamon (1/2 tsp.) is what I like to sprinkle on vanilla yogurt or Greek yogurt. Ceylon cinnamon is lighter in color and not as strong. It may have health benefits, but I eat Ceylon cinnamon because I love the taste. You can buy Ceylon cinnamon online at such places as My Spice Sage.com.  So, start your day with cinnamon in yogurt and have a Cinnamony Day!

Holiday:  Avocado Day!
Why She Picked It:  “When I read that Jacolyn’s monthly recipe challenge for March was a food ingredient so good it deserves its own holiday, I knew instantly that food would be the Amazing Avocado. The avocado is a staple in my house and I don’t just love them, I’m obsessed with them, eating at least two to three a week. There are endless possibilities of what you can make with avocados, from baby food to even a facial mask. I know there are those that lack my enthusiasm when it comes to the avocado, but if you can find a way to incorporate the most unique nutritional fruit that Mother Nature has bestowed upon the human race into your diet, I would highly recommend it. Avocados go well with just about anything and there are 552 recipes on allrecipes.com you can choose from.”

Fall In Love (with) Guacamole
Review:  Of course the most famous way to use an avocado is the guacamole salad; in fact I’m pretty sure there already is a national guacamole day. This recipe caught my attention by the catchy name, it is basic and a good starting place, just add in your favorite spices. I like to use guacamole in a sandwich wrap in place of mayonnaise; okay…I put it on everything.

Bacon, Avocado & Cheese Omelet
Review:  This past year I discovered how wonderful eggs and avocados go together, this omelet made with real butter of course is a great way to start the day.

Strawberry Avocado Salad
Review:  Believe it or not avocados go very well with many fruits, especially strawberries, mangoes, and peaches. This salad is how I converted my avocado hating friend. I like the dressing with honey (no sugar) and toss in some shakes of poppy seeds.

I agree that all of these things need a holiday! Great picks. Jacolyn I have made stuffed grape leaves and they are not nearly as hard as they seem. They are delicious!

About Me
I am a food addict and don't plan on recovering any time soon! I truly enjoy cooking and baking, though I still have much to learn. In addition to kitchen time, reading is one of my favorite hobbies. Also, I am the oldest of seven children, and my husband and I spend a lot of time with both of our families, because our parents and siblings live close. Finally, this is my second year in the Allrecipes Brand Ambassador program. This means that I volunteer to promote Allrecipes, because I love it!
My favorite things to cook
I enjoy trying new foods, but I often cook chicken dishes, because they are fairly easy and cheap. I really enjoy baking, but my husband does not like many sweets (much to my chagrin!) So, I often volunteer to bake a dessert whenever we spend time with other people or attend a church activity.
My favorite family cooking traditions
My favorite cooking/baking traditions are those that occur the days before holidays. My mother and I sometimes stay up all night baking together (usually Greek & Jewish recipes handed down from my grandmothers), and it is truly a bonding time.
My cooking triumphs
Most of the recipes from Allrecipes lead to cooking success stories. Thank you to all the members of AR that have contributed recipes and reviews. They have been quite helpful!
My cooking tragedies
When I first began cooking, I had several poor attempts at using the broiler, most of which ended in a fire! I am happy to report that I have finally learned how to use it, after several tries. :)
