This is an absolutely amazing recipe! We've already made it twice. If you're a veggie lover, add a bit more green pepper. Great with a dollop of plain yogurt or sour cream.

Chicken Chimichangas

Absolutely amazing! I have to say though, this recipe is LABOR INTENSIVE. There are a lot of parts to prepare, and then the frying in oil takes time (since I could only do one at a time) and it was one heck of a mess. In my opinion, what really makes this meal in the guacamole/salsa that you make with it. The only change I made was adding a packet of taco seasoning to the rice.

I really enjoyed this recipe. It was easy to make, yet quite classy. I tried them with basil and thyme, and GREATLY preferred the thyme. Just be aware that this can be quite messy - you'll end up with goat cheese all over your hands and spoon!

Chicken Pot Pie IX

Delicious! I couldn't find the celery seed where I am, so I added 2 cloves of garlic instead. I used half cream and half milk to thicken the mixture. Otherwise I made it exactly as the recipe called for. We will definitely make this again!

Delicious! We will definitely make it again. In the future I might try putting green peppers and/or mushrooms. I wish it were a little healthier, but it's still amazing and good.

Roast Pork with Maple and Mustard Glaze

Absolutely delicious! I made it as described. Could be made with chicken I imagine, and would be good to put onions, carrots, and potatoes in the dish! I was liberal with the black pepper which gave it a nick kick.

Vietnamese Fresh Spring Rolls

This was absolutely amazing! I cannot believe I made this. This is one of my favorite foods. These were just like a good Thai restaurant's. And the homemade sauce was GREAT. Here's my tip: Put LOTS of fresh herbs into the spring rolls, that's what gives them the trademark flavor. I will absolutely make this for any party I throw!

Layered Vegetable Enchilada Casserole

Delicious and easy! Due to my location, I couldn't find bottled enchilada sauce so I made my own. I also couldn't find corn tortillas, so I used flour ones, and that resulted in a noodle-like texture. It reminded me of lasagna! But it was surprisingly delicious and we'll certainly be making it again.

Chicken Cordon Bleu II

Delicious! I prepared a bit differently while keeping the sauce and general idea of this recipe. For a breading, I used homemade breadcrumbs with a number of different spices on hand, but first rolled the rolled-breasts in an egg batter. Instead of cooking in the pan I baked them, keeping the sauce to the side since it's so incredibly rich. Lastly, instead of corn starch I used flour but doubled the amount. It was a great hit at a dinner party!

Lentil Soup

What an amazing recipe! Due to what I could find and what I had on hand, here are the changes I made: -Added a bit of spicy sausage -2 cans of crushed tomatoes -Doubled the spices -Added a chicken bouillon cube (couldn't find chicken broth) Delicious! As others have said, it's a forgiving recipe that you can add what you have on hand.

Yummy Artichoke Dip

Delicious! I was making this at the last minute for a party, so I had to alter things a bit. I didn't have green chilies, but I sprinkled cayenne pepper on top for color and flavor. I also added a bit of garlic.

Fluffy Biscuits

This recipe is very easy and incredibly delicious! I made it exactly as the recipe called for, using all butter for the shortening because it's what I have on hand. We've made them twice this week now, once with beef stew and then once for breakfast sandwiches. They'll be a regular now!

Lemon Blueberry Bread

This was really really delicious! I put it into a glass 8x8 pan to make it more of a cake. YUM! I would recommend adding a bit more lemon zest and some vanilla extract. I did both and was happy with the way it turned out. I'll make it again!

Winter Fruit Salad with Lemon Poppyseed Dressing

This salad was quite delicious. I couldn't find everything perfectly, so I made small substitutions: plain walnuts instead of the candied pecans. This salad was very very sweet, and in the future I might add less sugar and/or a bit of vinegar.
