Seven Layer Taco Dip

This was AMAZING. Due to my location we don't have refried beans, so I used 1 14 oz. can of black beans. It worked just fine. I found that what the recipe called for was a bit too much in terms of the cream cheese/sour cream, so I used about 2/3rds. We also used a lot more veggies. Still absolutely amazing, I will make it again or try to adapt it into a salad!

Chevre Truffles

I really enjoyed this recipe. It was easy to make, yet quite classy. I tried them with basil and thyme, and GREATLY preferred the thyme. Just be aware that this can be quite messy - you'll end up with goat cheese all over your hands and spoon!

Winter Fruit Salad with Lemon Poppyseed Dressing

This salad was quite delicious. I couldn't find everything perfectly, so I made small substitutions: plain walnuts instead of the candied pecans. This salad was very very sweet, and in the future I might add less sugar and/or a bit of vinegar.

Mushroom Stuffed Zucchini

This was really good. Another reviewer commented on the amount of fat this meal had - I completely disagree. You need the cheese for flavor and protein so it holds you for a few hours. Feel free to use feta, sharp cheddar, more parmesan - get flavor in there!

Thai Ginger Chicken (Gai Pad King)

WOW! This is one of the best Thai recipes on this website. I've tried plenty, and it's been so difficult to find something that I would eat again. As you can tell, we loved this. Here are the changes we made: -1/3 cup of ginger: be sure to cut it small enough -added one green pepper -doubled the fish sauce, oyster sauce, chili paste, and added a bit more sugar to compensate Enjoy!

Spinach Brownies

These are alright. I think they need to cook significantly longer than the listed time, I cooked them for 35 minutes and wished I had done 45 minutes (or until the top becomes a bit golden).

Fruity Curry Chicken Salad

Delicious! I plan to make this next week because it's perfect for lunches. We added more curry powder and black pepper for personal taste. I also accidentally put in almonds instead of pecans, but it was delicious anyway!

This was pretty good, but not great. I wouldn't mind putting in some green peppers or something so it's a bit healthier. But it's delicious with noodles, bread, and big salad to balance it out!

Chicken Pot Pie IX

Delicious! I couldn't find the celery seed where I am, so I added 2 cloves of garlic instead. I used half cream and half milk to thicken the mixture. Otherwise I made it exactly as the recipe called for. We will definitely make this again!

Banana Bread II

Delicious! Absolutely amazing! I added a bit of cinnamon, allspice, and vanilla extract. I also sprinkled chocolate chips on the top! I didn't need to bake an hour, only 40 minutes, so keep an eye on it!

Simple Baked Apples

What an amazing and relatively healthy dessert! I followed the recipe except for one thing - I put a teaspoon of vanilla extract into my milk. A nice touch indeed! I think this will be a staple in our household from now on.

Lemon Blueberry Bread

This was really really delicious! I put it into a glass 8x8 pan to make it more of a cake. YUM! I would recommend adding a bit more lemon zest and some vanilla extract. I did both and was happy with the way it turned out. I'll make it again!

Stuffed Bell Peppers

I'm sorry to say this recipe was just okay. It needed a lot of salt and pepper to doctor it up. I think if cheese were mixed into the stuffing that would also be helpful. But otherwise it was bland. Won't make again!

I'm sorry to say we didn't really like this recipe. We first had it in pita bread with falafel and a yogurt cucumber sauce, and it was okay. When we had it on its own, it wasn't that good either despite following the recipe exactly. We won't be making it again.

Homemade Bagels

This didn't work out very well for me. Although I followed all the directions, the dough didn't rise well enough. After a few hours and a bit of rising I went ahead and boiled them. Don't flatten these! Keep them fairly round. Also, be sure to bake them a bit longer than it says to, unless your bagels are quite small. Mine baked for about 30 minutes but could have used more time.

Toasted Breadcrumbs

Such a simple thing to do, and it saves money! Probably healthier too. I added a few spices I had in the house: salt, pepper, basil, rosemary, and parsley. I use it on casseroles all the time now.
