Jacky's Fruit and Yogurt Muffins

Reviewed: Mar. 6, 2011
I had some problems with these muffins. I had to add extra water because I couldn't get all my flour absorbed. But then when they came out, I admit that they were delicious, but they were so moist that it wasn't really a muffin. The cooked muffins would stick to your fingers, so it was a bit strange.

Pad Thai

Reviewed: Mar. 6, 2011
This recipe is an okay base, but it really needs some work. First of all, as other reviewers said, you must double or even triple the sauce. The amount of crushed red pepper is nothing, so don't be afraid of that. I added a few things to make the flavor a little better. I squeezed some lime juice in. I put in 2 small carrots and a red pepper for color, texture, and taste. And most importantly in my opinion, I added a lot of fresh chopped cilantro. That is a key ingredient that's missing. Feel free to play with the sauce base as well, I added 1 tablespoon of oyster sauce.

Fruity Curry Chicken Salad

Reviewed: Feb. 27, 2011
Delicious! I plan to make this next week because it's perfect for lunches. We added more curry powder and black pepper for personal taste. I also accidentally put in almonds instead of pecans, but it was delicious anyway!

Bow Ties with Sausage, Tomatoes and Cream

Reviewed: Feb. 24, 2011
The recipe as it is listed needs some tweaking in my opinion. I added 1 cup of cream, and it was still quite rich. There could be more tomatoes to make it a better sauce in my opinion. I also doubled the amount of red pepper flakes. When we served it, we discovered it was delicious with a generous sprinkling of black pepper. Yum! Lastly, next time I make this I will add broccoli or spinach to make it healthier.

Asian Orange Chicken

Reviewed: Feb. 21, 2011
Unfortunately we didn't like this! I used two huge chicken breasts and added some peas, yet there was too much sauce. I also only used 1/4 C of sugar as other reviewers suggested, yet it was way too sweet. I'm bummed!

Quinoa Tabbouleh

Reviewed: Feb. 20, 2011
I'm sorry to say we didn't really like this recipe. We first had it in pita bread with falafel and a yogurt cucumber sauce, and it was okay. When we had it on its own, it wasn't that good either despite following the recipe exactly. We won't be making it again.

Spicy Vegan Potato Curry

Reviewed: Feb. 12, 2011
This was pretty easy to make and definitely delicious. If I were to make it again, I might tone down the spices a little bit. I do like spicy food but this was almost overpowering. Perhaps reduce a little bit, then add in depending on the flavor. Definitely best with Indian bread.

Easy Apple Cinnamon Muffins

Reviewed: Feb. 12, 2011
This recipe was pretty good. I didn't use the topping to make it a bit healthier. I had to double the recipe because (as it says) it only makes 12. Be sure to let it cool thoroughly before pulling it out of the pan because it's a bit crumbly. Be sure to bake it long enough as well.

Seven Layer Taco Dip

Reviewed: Feb. 6, 2011
This was AMAZING. Due to my location we don't have refried beans, so I used 1 14 oz. can of black beans. It worked just fine. I found that what the recipe called for was a bit too much in terms of the cream cheese/sour cream, so I used about 2/3rds. We also used a lot more veggies. Still absolutely amazing, I will make it again or try to adapt it into a salad!

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Jan. 26, 2011
This salad was quite delicious. I couldn't find everything perfectly, so I made small substitutions: plain walnuts instead of the candied pecans. This salad was very very sweet, and in the future I might add less sugar and/or a bit of vinegar.

Chevre Truffles

Reviewed: Jan. 26, 2011
I really enjoyed this recipe. It was easy to make, yet quite classy. I tried them with basil and thyme, and GREATLY preferred the thyme. Just be aware that this can be quite messy - you'll end up with goat cheese all over your hands and spoon!

Italian Style Meatloaf I

Reviewed: Jan. 17, 2011
This was pretty good, but not great. I wouldn't mind putting in some green peppers or something so it's a bit healthier. But it's delicious with noodles, bread, and big salad to balance it out!

Chicken Pot Pie IX

Delicious! I couldn't find the celery seed where I am, so I added 2 cloves of garlic instead. I used half cream and half milk to thicken the mixture. Otherwise I made it exactly as the recipe called for. We will definitely make this again!

Amish Breakfast Casserole

Delicious! We will definitely make it again. In the future I might try putting green peppers and/or mushrooms. I wish it were a little healthier, but it's still amazing and good.

Roast Pork with Maple and Mustard Glaze

Reviewed: Jan. 14, 2011
Absolutely delicious! I made it as described. Could be made with chicken I imagine, and would be good to put onions, carrots, and potatoes in the dish! I was liberal with the black pepper which gave it a nick kick.

Spicy Garlic Lime Chicken

This recipe certainly was not bad, but it was actually a bit too lime-y for us! Perhaps go easy on the lime, then add some to taste.

Mother's Banana Bread

Delicious! Absolutely amazing! I added a bit of cinnamon, allspice, and vanilla extract. I also sprinkled chocolate chips on the top! I didn't need to bake an hour, only 40 minutes, so keep an eye on it!

Simple Baked Apples

What an amazing and relatively healthy dessert! I followed the recipe except for one thing - I put a teaspoon of vanilla extract into my milk. A nice touch indeed! I think this will be a staple in our household from now on.
