Spring Salad

I've been making this recipe for a couple of years now. I've made it as described and it's wonderful! It's also very versatile though. Sometimes I don't add the sugar (we're paleo), sometimes I make my own mayo. Sometimes I swap out cranberries for the raisins or walnuts for the pecans. It's just flexible and relatively healthy.

Best Chocolate Chip Cookies

I followed this recipe almost as written and it was great! I baked my cookies an extra minute because my oven is slow. I also omitted the nuts. I will definitely make it again.

Mahi Mahi with Coconut Rice and Mango Salsa

Great recipe. The marinade is to die for. I don't recommend any changes. I've made it a couple times now, and I make the salsa differently (although the recipe is good). I add red pepper and lime juice to make it a bit more traditional.

Date Goat Cheese Basil Bites

I made these for my New Years party and they were a big hit. I didn't think they were too sweet. I'd like to try the recipe again but wrapping them in bacon. No need to add salt; the recipe doesn't call for any so I didn't add any - I was a little worried but the prosciutto was plenty. Make sure to get pitted dates; it's a real pain to pit them yourself :) All in all it's a time-consuming recipe, but well-worth it if you want to wow your guests.

Fluffy Biscuits

This recipe is very easy and incredibly delicious! I made it exactly as the recipe called for, using all butter for the shortening because it's what I have on hand. We've made them twice this week now, once with beef stew and then once for breakfast sandwiches. They'll be a regular now!

Real Hummus

Couscous with Mushrooms and Sun-Dried Tomatoes

Unfortunately we thought this was just okay. I won't be making it again. I followed the recipe all the way, minus using the tomato water for the couscous. To substitute I added thick tomato puree and a little bit of chicken broth to get the flavor back in there. The tomatoes were very overpowering - I would recommend putting them in a food processor to get them into smaller pieces.

Mushroom Stuffed Zucchini

This was really good. Another reviewer commented on the amount of fat this meal had - I completely disagree. You need the cheese for flavor and protein so it holds you for a few hours. Feel free to use feta, sharp cheddar, more parmesan - get flavor in there!

Lemon Blueberry Bread

This was really really delicious! I put it into a glass 8x8 pan to make it more of a cake. YUM! I would recommend adding a bit more lemon zest and some vanilla extract. I did both and was happy with the way it turned out. I'll make it again!

Pineapple Fried Rice II

This is pretty dang good! I made the rice ahead of time. I also used tofu and chicken instead of ham. I also added a bit of fish sauce and oyster sauce. I will make this again and continue to tweak the ingredients to my personal taste.

These are alright. I think they need to cook significantly longer than the listed time, I cooked them for 35 minutes and wished I had done 45 minutes (or until the top becomes a bit golden).

This is an absolutely amazing recipe! We've already made it twice. If you're a veggie lover, add a bit more green pepper. Great with a dollop of plain yogurt or sour cream.
