i made muffins! left out the walnuts, but otherwise followed the recipe. the muffins were so moist and tender, not to mention really tasty

these were awesome! i used real butter, cause i can't stand using margarine for anything. i had to switch to a bigger bowl than i was using at first cause it boiled over, but that was my only issue

Carrot Cake III

this was great! i cheated and used the matchstick carrots, so i didn't have to grate anything. i was glad this recipe didn't have any pineapple, cause i can't stand the stuff. i did use half applesauce and half oil, and added just a touch of nutmeg

Cheesy Pork Chops with Spicy Apples

these were to die for. i cooked them on the stove top and omitted the vinegar. i used stew meat instead of the chops, b/c it's what i had on hand. i added LOTS of crushed red pepper to the apples, cause we like it spicy. also used shredded cheese instead of the slices.

Apple Cake and Butter Sauce

this cake was very tasty. i did, however make a few small changes. i really like cinnamon, so i upped it to a full tsp. also, i like using wheat flour, so i used 1/2c wheat and 1/2c white flour. instead of a glass pie pan i used my pampered chef stoneware pie pan. it was very tasty and moist. the sauce went with it very well too.

Chocolate Mint Layered Torte

this cake is delicious. the mint flavor is subtle and not overpowering. also, you can subtitute other extracts for the mint. next time i think i'll try it with orange.

this cake was delicious. it was extremely rich with the semi sweet chocolate chips, however. i think next time i will try milk chocolate chips. i'm also tempted to try white chocolate chips. i'm sure both will turn out wonderful.

Orange Chocolate Muffins

instead of using grated chocolate, i used the cocoa powder conversion of three squares. also, i used the one bowl method where i dumped everything in and mixed it up real good. they still came out great! with very little effort i got muffins that were very chocolatey with just the right amount of orange flavor.

Chocolate Mint Pinwheels

this is a crunchy cookie, not a soft one. they do take a bit of effort to make, but the resulting cookies are quite pretty. this is a cookie you make for parties, not something you whip up for a sweet tooth. i thought they were just a tad on the bland side, but still very good.

i didn't think the zest was quite enough flavour, you could barely taste it. so i added some juice to each layer, and that really helped. i put a little less lemon juice in the filling b/c i thought it was too strong. but after those minor adjustments i thought the cake was very good.
