Squash and Coconut Milk Stew

Good base recipe, but kind of bland. I added an extra can of coconut milk, a LOT of extra garlic and ginger, a diced red pepper, a small amount of fish sauce, and a pinch of cayenne. I also served it over rice.

Tomato and Mozzarella Bites

These are so tasty and easy to make! After assembling them (I use a single tomato per toothpick, and keep it whole), I drizzle the batch with good quality olive oil and sprinkle with salt and freshly ground pepper. This is one of my go-to appetizers!

Squash Casserole with Crunchy Pecan Topping

This is absolutely delicious! I brought it to my family Thanksgiving dinner. The people who grew up hating squash said it was the best they'd ever had (and proceeded to eat it happily) and those who actually like squash ate seconds... and thirds... and made me promise to bring some to Christmas dinner. I followed the recipe exactly, but due to time constraints I stuck it in the fridge overnight before baking it (and then let it sit on the counter for about half an hour before putting it in the oven). Next time, I will wait until it's about to go into the oven before applying the topping to be sure to get it nice and crunchy!

Donut Muffins

These are super tasty! I followed the recipe exactly, except I added a little extra fresh grated nutmeg. They definitely don't have the texture of a donut (not that I expected that, but since other people were complaining about that..) but they have a nice, tender muffin consistency. One tip - don't over mix the batter! When it says to mix until just combined, they mean it! If there are lumps and still a little flour visible, this is fine! When you over-mix muffin batter, it gets still and doesn't rise properly.

Crackle Top Molasses Cookies

These cookies are pretty good. I followed the recipe exactly - if I make them again, I will increase the spices and decrease the cooking time. They get super hard/crunchy but are still tasty (especially with a hot beverage).

Quinoa Chocolate Treats

I'm a huge fan of *cooked* quinoa, but apparently not of uncooked. The chocolate and marshmallow part of it was fantastic, but the texture and flavor of the quinoa reminded me of birdseed with a nasty aftertaste. I couldn't eat more than one little bite :( What a waste.

Quinoa and Black Beans

This is so much better than I expected it to be. My family is trying to eat more whole grains but we can't stomach brown rice. Since trying this recipe, we know there is hope! I only used half an onion (that was all I had) plus a sprinkling of onion flakes. Otherwise I kept to the recipe exactly and it was fantastic! I will definitely make a double batch next time so there will be leftovers!

Homemade Cream-Style Soup Mix

This is awesome! It also makes the perfect amount to fit into a large mason jar. I tied it up with a ribbon and a note with how to use it and gave it to my mother. She can't really cook for herself anymore and really enjoys this comforting mix!

Cabbage Beef Soup

I wanted it to be done in less than 4 hours, so I cooked this on the stove instead of a crock pot. I used dried beans (soaked overnight, and then cooked for only about 30 minutes and then measured into 32oz and added to the soup). I feel there was too many beans and not enough beef or cabbage. Next time I would cut the amount of beans in half and double the cabbage. Also, the cabbage should be added with only an hour or two of cooking time left so that it keeps a nice texture/flavor. I only used about a tsp of the cumin and added some thyme, marjoram, sage, and parsley. I served this with the herb bread from this site and it was tasty! It made a lot of soup, too! perfect for leftovers.

It tasted great but didn't make nearly enough to fill an 8in pan even half way. If I were to attempt to make it again I would double the recipe.

Cut-Out Cookies Made with Oat Flour

I love this recipe! The dough is very easy to work with and the cookies melt in your mouth. I made mine into linzer cookies with raspberry jam and they are amazing! I will definitely use this recipe again.

KELLOGG'S* RICE KRISPIES* Peanut Butter Balls

This was good, but not great. The flavor was kind of meh, and I used amazing peanut butter. I agree with everyone to not use water when melting the chocolate. I didn't attempt it with this recipe but I've failed before because I made that mistake. It might work if you do it *just* right, but why risk it? I think I prefer regular RK treats drizzled in chocolate to this one.

Blonde Brownies I

Yum! I made these over at my in-laws and they were delicious. Sadly, I had to omit the nuts (due to allergy) so I added some whole dried cherries instead. I could see where the nuts would add some great texture, but the cherries were amazing, too! The dried cherries prevented it from being too much of a globby sweet mass. I also used dark chocolate chips instead of semisweet, but I don't think the type of chocolate matters much. Just don't use milk chocolate, it would be too bland. I will definitely make these again :D
