Pork Roast with Sauerkraut and Kielbasa

Lentil Soup

Yummy. Gave only 4 stars because I followed reviewer Blankin's suggestions using 28 oz can of crushed tomatoes, double carrots, double spices, pinch of crushed red pepper, 1 can of chicken broth (water to make up rest of liquid needed in recipe), lemon juice and port. Those changes make it a 5 star. Added shredded parmesan cheese on top of each bowl.

Lemon Butter Chicken

This was delicious and EASY!. I didn't have lemon pepper but I did sprinkle a little black pepper for kick, about 1T dried parsley for color, and finished each dish with a sprinkle of shredded parm cheese to mellow the lemon/vinegar flavor.

Slow-Cooker Pepper Steak

Outstanding. Made recipe pretty exact with minor changes: I used the pre-cut stir fry beef for ease. I didn't even cook the beef, I just threw it in the crockpot frozen. I also added the peppers and onion the last 2 hours on low. The gravy was still a little runny so I did add an additional 1T of cornstarch the last 30 minutes to thicken. Just like my mom used to make for my birthday!

Moroccan Chicken and Whole Grain Couscous

This was 4 star with the adjustments I made based on recommendations. Added 1/2 more the spices. Disappointed to read Myleen's post/review to add garlic with onion--she omitted it in the recipe. Saw that too late and added it while stewing. Thought she could have edited her recipe to add this omission. I used a 48 oz box of chicken broth but reserved 2 cups for my couscous cooking liquid. The 30 oz was still a bit too much cooking liquid. But you might need that amount to cover the chicken so chicken can absorb flavors. Also added 2 cans of garbanzo and 1/2 of raisins. May add 1 cup next time. Used 12 chicken thighs that I skinned. Good but not perfect. Anxious to try leftover tonight so see if the flavors improve.

Slow Cooker Oats

Very good. Made recipe plus half (for 9 servings). Cooked on low for 8 hours. It was a bit crusty around the edges but delicious. Made as is. Used milk, mixed dried berries, apples. Kids loved it. Nice to wake up too on a cold Saturday.

Slow Cooker Chicken Tetrazzini

This was a fabulous slow cooker recipe. I did make a couple of changes due to taste. I used only 1/2 a packet of italian seasoning to cut down on saltiness. I added more oregano and basil to keep flavor. Used about 4 oz. of cream cheese because it was all I had and it was perfect amount--not overwhelming. Used cream of mushroom soup. Also added red pepper with the onion. Yummy.

Yum. Made with a sweet/dry wine so left out port. Added the Cardamon as suggested. Made the rest of the recipe as is. Oh so good. Just the thing during a snow storm to warm us up.

Cranberry Chicken II

Good. Based on suggestion, I only used 1 onion soup packet. I'm glad or the nion soup would have been overpowering. Also used about 3/4 of dressing so it added some flavor but you could still taste the cranberries.

Steak Tip Marinade

Because I find our steak meat is inconsistently tender, I throw the meat and marinade in a crockpot for about 5-6 hours. Then preheat grill on high and put tips on grill for about 1 minute each side just to sear. Yummy and tender. Also, quality bbq sauce is a must. I also use Newman's Own Lite Italian dressing. It is the lowest in sodium that I can find (260mg/serving)
