About this Cook
I absolutely Love cooking! I had been looking at cooking shows since I was about 9yrs old when my grandmother who raised me first began teaching me to cook. She saw that I had an interest in cooking since I would always sit in the kitchen watching everything that she did and I would take notes on even her technique. I would also read any recipe magazines and books to learn as much as I could about cooking. I am Puerto Rican and Italian so I learned very early on to cook both types of food. It has always been my dream to open up a Puerto Rican/Italian resturant.
My favorite things to cook
I Love Baking and trying to make anything atleast once. Hey trial and error are words to live by. I make a mean Cheesecake. I also cook an excellent Flan de coco(coconut spanish custard)and Sweet Potato Pie. Lets not even get into my Puerto Rican style Rice Pudding;-)
My favorite family cooking traditions
One of my most favorite and memorable family traditions are getting together with all of my family, playing some music and making Pasteles together. It can not get any better than that.
My cooking triumphs
Taking recipes and altering them to what I feel would be better and receiving lots of compliments especially when the person who gives you the recipe says that it taste better than theirs; now that is triumph.....
My cooking tragedies
Trying some recipes that just did not make the cut. That I personally gagged on and boy there were a few. Wow another tragedy comes to mind when we first moved to PA six years ago and I baked for the first time in an electric oven that was damaged. It would get hotter than the temperature that you would set it to and I burned everthing that I made at first until I figured out it was damaged but only after several burnt meals and cakes.

Coconut Custard Pie I
I personally did not like this recipe. I took tips from others by reducing the sugar to 3/4cup, using sweet condensed milk and coconut milk instead of regular milk but it was still just too sweet for me. I also feel that it was way to greasy and should have taken someones comment about reducing the butter to 2tbsp. instead of 1/2cup or just not using butter at all. I also feel that it just quite didn't have that authentic custard texture, should've probably used 3 eggs instead of 2. Overall I feel that it is a simple base recipe to have an idea of what is needed for a coconut custard pie. I am going just have to play around with it a bit to get this right.

Sweet Potato Pie II
This was a great recipe except that I played around with it just a bit to make it have a bit more flavor and texture. Added a touch more of the cinnamon, nutmeg,ginger and also added a little vanilla for taste. I also make the mix a little bit thicker by adding just a touch more of the potatoes and making the egg whites and white sugar like a meringue consistency. I have made this every year for thanksgiving and always get great remarks about the pie. The family always ask that I make it in advance.
