African Peanut Soup

One of my favorite soups: easy to make, nutritious, delicious, and freezes well. What more could you ask for? For variety, I've tried substituting cashew butter--also great.

Coconut Curry Tofu

Love this! Good flavor, easy to make. Even my 4 year old, who is in a "spaghetti & watermelon only" phase, ate this, though she did tell me it was a little spicy (I'd cut down on, but not eliminated, the chili). And for the grown-ups in the family, it was a complex enough flavor that it satisfied :)

Ziti and Eggplant

I've made this a few times now. It doesn't wow me--lacks flavor as written. I'll keep making it, but add more Italian seasoning and perhaps simply salt & pepper to make it more interesting.

Ruth's Red Lentil and Potato Soup

Good and very flavorful. I sometimes make a plain red lentil soup, so this is a nice variation from that. If you're cooking for kids, beware that flavor is probably too strong for the young palates.

Quinoa with Chickpeas and Tomatoes (adjusted)

Didn't have tomatoes the first time I made this, but the lime gave it a fresh flavor. Also, quinoa can be kinda bland when cooked in water, so I will sometimes cook it in vegetable broth, or do as others suggested and ramp up the spices or add more veggies.

Slow-Cooker Chicken Tortilla Soup

Delicious! The easiness key, as others have noted, is to throw the chicken in raw and let the slow cooker cook it, shredding it 30-60 minutes before turning off the slow cooker and serving.
