Whipped Cream

I doubled the recipe, but found it wasn't sweet enough, so I added an additional Tbsp of 10x and it's just right for over sweet strawberries. My bowl and beater weren't chilled, but it worked just fine that I can tell. With the price of heavy cream, I very nearly bought a can of aerosol whipped cream but decided to go this route to avoid chemicals and preservatives. I'm glad I did.

Perfect Chocolate Cake

This was a good cake. I got a lot of compliments on it. I had to give it four stars, however, as I was a little flustered while baking it -- it took 32 minutes, not the prescribed 18-22. I baked it in two 9" pans, as that seemed to be all there was batter for (and all I had), at 325 because they were dark, nonstick. They did stick to the pan a little, but nothing unsalvagable once the frosting was on. I did not use the chocolate frosting, but instead doubled the whipped cream recipe, using a few drops of peppermint extract in place of some of the vanilla extract. This gave a very subtle mint flavor to the frosting, which I used over the entire cake. I crushed 3 large candy canes and spread them over the top and finished the whole thing with large piped stars around the bottom and top edges. I got *a lot* of compliments both on the look and taste of the cake, and there was none left at the end of the evening. (I took it to a shared supper at church.) I will post a picture if I can figure out how. One other thing -- this was a tall cake. The star edging that I added bumped against the top of my cake dome.

Oriental Cold Noodle Salad

I needed a recipe for a potluck, but I was leaving the house a few hours beforehand and the facility had nowhere to heat a dish, so this fit the bill. I used buckwheat soba and got many, many compliments on the dish. Two people asked for the recipe. One thing I was wondering, though... Would it make any difference to break up the soba noodles before cooking? It was awfully sloppy to try to chop them into smaller lengths after they cooked, as the instructions called for.

Italian Meatballs

What a disaster. I halved the recipe, used less than half of the spices (substituted a little basil, too,), and didn't use seasoned breadcrumbs. They still appeared overly seasoned. But that's not the worst. The recipe says an hour in the oven at 350, so I popped them in and got my son in the tub. After 20 minutes, the smoke alarms were going off and I had little dry balls of meat that were starting to burn on the underside. I'm still tossing them in the crockpot with a ton of sauce, hoping that gives them some moisture back and makes them edible, but I won't try this recipe again.
