About this Cook
I am a Mom to four, Grams to six and now Great Grams to five. We have a big, loud, noisy but fun family who all like to gather for holidays, birthdays and such. I am old enough to have retired from being a contract administrator, but young enough to still work part-time at the same job. I am also an artist, painting in water media and also teaching watercolor classes one day a week. I like to have an arsenal of quick meal ideas to fit my busy schedule but I also like to try new recipes to keep meals interesting.
My favorite things to cook
I love to cook skillet meals, casseroles and dishes that can work overtime where the leftovers can find their way into another easy meal.
My favorite family cooking traditions
Like many women, I learned to cook from my Mother. I can remember "helping" her bake cookies when I was barely old enough to see over the top of the kitchen table. Mother's recipes were handed down to her from her Mom and nothing was written down - it was all from memory.
My cooking triumphs
My family says that I make the best pizza in the world. The secret is always the crust! It has to be fresh, yeast dough - not too thick and not too thin and not overworked or it gets tough.
My cooking tragedies
I once tried an eggplant casserole dish that sounded wonderful but turned out to be inedible! The entire mess went down the disposal!! The vegetables had a horrible consistency, in fact just thinking about it now makes me shudder!

No-Mayonnaise Ranch Dressing
The best low fat, low calorie ranch dressing recipie that I have ever tried. It is low cal enough that you can use a lot of it on your salad without the guilt. I have started using it as a dip with veggie trays. Folks seem to like it because I don't tell them it is a low fat recipe (you know how that goes). Preparing it ahead of time and then letting it sit in the refrigerator over night gives the flavors time to mix together.
