Blueberry Pancakes

This recipe is fantastic! I didn't have any of the issues of the other reviewers. The pancakes were light, fluffy and tasty! I used a vanilla yogurt and omitted the sugar and just placed the blueberries on the pancake batter as it cooked instead of folding in the batter. My kids devoured them! I would even make this as a batter without the blueberries for a little change from the standard pancake.

Grandma's Doughnuts

Simple and delicious! Great for a quick treat for my kids. I made a basic glaze out of water and powdered sugar. The donuts were light and tasty.

Chocolate Muffins

Parmesan Asparagus

This is a great simple way to prepare asparagus. Like previous reviewers, I used a ziploc bag and coated the spears before baking. My variations: I used caramelized garlic olive oil and omitted the garlic itself. I also finished it off with a drizzle of balsamic glaze. My whole family loved it. My husband raved over this method!!

Easy Tiramisu

The title says it all: Easy tiramisu. I recommend doubling the filling, using the proportions listed isn't enough, it would make the ladyfingers overwhelming. I also had to make my own mascarpone substitute, the taste was slightly different but just as delicious. I would also suggest sweetening the coffee with sugar or sugar substitute before dipping the cookies, especially if you plan on serving the same day. The bitterness of the coffee can be overwhelming to some. The longer you keep it in the fridge, the better. If possible, make it the day before. It is MUCH better the next day. The flavors meld so much more.

Strawberry Spinach Salad II

This salad was quick and delicious. The dressing was very flavorful although I used olive oil instead of vegetable oil. I dumped all of the dressing on the salad to toss it and it was a little heavy even for me. Next time I'll pay more attention and not use it all. Perfect salad for something different!

Baked Scallops

A good scallop recipe and frying alternative. It was moist and buttery and easy to make. I liked it because I could prep it and let it bake while I worked on other dishes. Allowed me to have a multi-course meal without being too rushed in the kitchen.

Chocolate Meringue Cookies

These are just what I was looking for. I had these cookies as a kid and was excited to find a recipe. I used the same suggestions as the folks below and they turned out great. I piped them out of a baggie and made them more of a bite size cookie. Perfect for snacking!

Easy and Delicious Chicken

This recipe is just as the title states: Easy and Delicious! I put my slow cooker on high and it decreased the cooking time of the chicken to about 3.5 hours. My family loved it, we served over brown rice--my husband even took leftovers for his lunch and he never eats leftovers!
