Cranberry Applesauce Muffins

I really like these muffins. Not too sweet. I soaked dried cranberries in hot water before making as I did not have any fresh or frozen. Dust with a little powdered sugar if you want to doll them up for a brunch. Should freeze well.

Tangy Vegan Crockpot Corn Chowder

I made this on the stove top rather than in slow cooker. I sauteed the onion and garlic in olive oil did not use margarine or lime juice. I also left out chile peppers. I only pureed about half of the soup and stirred back in the rest for texture. It was wonderful and everyone enjoyed in with homemade bread. I will make this again.

Delightful Indian Coconut Vegetarian Curry in the Slow Cooker

I read this recipe and wanted to make for dinner but did not have slow cooker time. I had potatoes already boiled and I cut carrots into matchsticks and steamed in micro. I used coconut milk and veggie broth for the liquid. I cut the pepper flakes and cayenne in half and the curry powder by about 1/3. I left out the Lipton soup mix and sauteed one onion, and two cloves of garlic with the bell pepper in olive oil and then added all the ingredients and cook for less than an hour on low on the stove. I also added a can of garbanzo beans. I added the peas, frozen at the very end. We served it with a green salad and flat bread for dipping. Everyone liked it and said they were glad that I cut down on the heat so they could enjoy the other flavors.

Caesar Salad Supreme

I used garlic and butter croutons, did not make my own. I shaved a wonderful Pecorino on the lettuce and no Parmesan in the dressing. It was wonderful.

Bacon Turnip Mash

I have made this twice now. It was such a hit with both the kids and adults that I was requested to make again and my daughter in law bought the turnips for me since both her boys loved it.

Lentil Quiche

I loved this recipe. I used red lentils which I really liked because it seemed like crust. I also increased eggs to 6 and milk to 1 1/2 cups to fill over veggies. I used a deep dish pyrex pie plate. I also used Gruyère cheese, 1/2 which I put on top of ingredients before I poured egg milk mixture but it made a beautiful glaze over top. I used basil and lemon thyme to season because that I what I had. One of my kids ate it with fresh salsa over it. We will definitely be making this again thoughout the summer. I can think of other veggies that could be used. I loved the fresh tomato taste as well.

Mystic Mushroom and Quinoa Chowder

This was very good. I did make a few changes. I used honey instead of molasses and I tossed in some fresh thyme at the end just before serving. No need to use cream, milk works just fine. I used vegetarian stock for chicken stock and olive oil for butter. I cooked a few extra mushrooms to stir in if anyone wanted them for texture. Great protein soup without meat and finished with a tossed green salad

Coconut Bread Pudding

This was very good. If you like coconut, you will like this. One of my girls is a big coconut fan but it must taste like real coconut not just flavored. Followed the recipe.

Tangy Slow Cooker Pork Roast

I thought this was very good. I followed the recipe except that I used Balsamic Vineager. I did not feel that it was lacking in flavor or spice. The sauce was excellent on potatoes. I would recommend this to anyone. All the family liked it and I also thought that the flavors blended the second day with leftovers.

Apple Carrot Muffins

These muffins are wonderful. If you love carrot cake you will love these. I made the in the jumbo muffin pan, doubled the recipe to make 12. They make a great breakfast on the go. I drizzled a little powdered sugar and milk glaze over them.
