Jay's Jerk Chicken

This is very similar to the recipe I use (although heavy on vinegar, soy, and oil). But you REALLY need to use habaneros (or scotch bonnet peppers, if you can find them). I use 3-4. Carefully scrape out ALL the seeds and membranes and the heat will be moderate, leaving the fruitiness of the pepper, which you don't get from jalepenos.

Microwave Baked Apples

Good--make sure you use an apple that holds up to cooking, and start with a shorter microwave time, esp. if not using large apples.

Philly Steak Sandwich

Not a Philly cheesesteak, but OK. For Philly-style cheesesteak, meat should be super thin (freeze 90% and shave across grain using thin slicing disc of food processor). Also, cheese should be american or provolone (slices laid over and stirred into meat while it's in the skillet, at end of cooking) or Cheese Whiz. But if you're not specifically looking for a Philly cheesesteak, this is a tasty sandwich for what it is.

Tzatziki Sauce

Good, but PLEASE NOTE: yogurt will break down if it is stirred with too much force--especially using a food processor! This is why some people had runny results even after draining the yogurt overnight. Instead, chop everything else up separately and gently fold it into the yogurt with a spatula.

White Bean Chicken Chili

I have made this a couple times now and really enjoy it--a great use for leftover chicken, although I'll cook chicken just so I can make this. Next time I want to add some heat--with the tomatoes and tomatillos the primary flavor is one of sweetness, and I want a little something to balance that out. I'll need to get a lime, too, as I haven't tried it with that. I like it with cilantro. Easy (with frozen corn), quick, good.
