Bella's Rosemary Red Potatoes

I've made this recipe many times and it is great! I altered it a little by adding 2 sliced yellow onions and 2 cloves of sliced garlic. I mix the potatoes, onions and garlic in a large bowl with the olive oil, salt, fresh ground pepper and fresh rosemary. Then I line a roasting pan with foil, spray it with Pam and dump the potatoes in the roasting pan. After 30 minutes I sprinkle, grated Romano cheese over the potatoes and leave in the oven for 5-10 minutes. These are superb!!!

Irish Cream Chocolate Cheesecake

Made this for St. Patrick's day dinner and it was a big hit. Very rich so we cut small pieces. My son took the leftovers back to the college dorm and they all loved it too! This is definitely a keeper!!!

Lamb Feta Peppers

Served this to guests last nite and it was a big hit. Couldn't find ground lamb in my supermarket, so I used ground turkey and it came out great. Followed others suggestion, and I doubled the sauce quantities and we had plenty of sauce to pass around. Thanks for a GREEEEEEAT recipe!

Sweet Pork Chops

This recipe is awesome. My hubby can't wait for me to make it again. I did change the way I cooked the chops though: I covered the pan and cooked it on a very low flame for 20 minutes, turning the chops over once during cooking. They were tender and moist. I also used 1/3C milk with only 2 Tablespoons of cornstarch and the sauce thickened up nicely, without any lumps! Thanks for a great recipe!

Cashew Raisin Rice Pilaf

This dish was superb! I made a few changes though: I used 1/2C Wild Rice/Long Grain Rice because I couldn't find just plain Wild Rice. I mixed it with 1/2C Uncle Ben's Extra Long Grain Rice, used 2 Cups of chicken broth. I also cut down the amounts to 1/3 of all the vegetables as well, since there's only my husband and me. I also followed another reader's advise and toasted the cashew's as well and this was an outstanding dish. I made the sweet pork chops (on this site) with it and used the sauce from that over this rice dish. My husband can't wait for me to make it again. I still have leftovers of the rice!

Fettucine with Heavenly Salmon Sauce

This recipe was very very delicious. It was easy to prepare, quick to make and very satisfying. You really couldn't tell it was salmon you were eating, it could have been tuna or pasta. I substitued non-fat sour cream to save on calories, but other than that, followed the recipe exactly as written. Thanks for a great fish recipe that we'll make again and again, especially during Lent.

Mandarin Shrimp and Vegetable Stir Fry

I have now made this recipe twice and it is delicious!!! My husband and I both loved the flavors and the spiciness of this dish. We served it over hot minute rice and dinner took no more than 20 minutes from start to finish. And the leftovers tasted terrific the second night. Thanks for a wonderful recipe!!!!

Pumpkin Chili

This Chili was exceptional!!! My husband and son both loved it and asked for 2nds and 3rd. The only thing I added was grated cheddar on top and served it over bow tie pasta. This is a definite keeper and great for Sunday Football Dinners!!!

Rhubarb Cherry Pie

This pie was awesome!!! I made it in a 10 inch deep pie plate so I had to add another two cups of chopped rhubarb. Also, I didn't have tapioca in the house so I used flour 8 Tbsp. and it came out just fine. Everyone loved it, not too sweet nor too tart! This is definitely a KEEPER!

Baker's Secret Pie Crust

I made this for the Cherry Rhubarb recipe and it was FANTASTIC!!! My mother even said it was the flakiest pie crust she had ever had (she herself is a terrific baker). I messed up the first time and the dough was too wet but I added a little more flour and used that as the bottom crust. My food processor is a mini-processor and it could not take all of the ingredients, so when I made the second crust for the top I followed the receipe up til the part where it says to add the balance of the crisco and butter. I removed the first batch of flour and shortening and just added a little bit of flour back in for the remaining crisco and butter. It is very important to gently fluff the wet ingredients into the flour or you WILL END UP WITH WET DOUGH! Thanks for the great recipe!!!

Swordfish a la Siciliana

Wow!!! This was great! It did not even taste like fish! We had a small piece left over and my husband had it last nite. We never ever saved fish before. The blend of flavors was terrific and very easy to prepare!!!

Hot Fudge Cake

This cake was very easy to make. It was a little difficult to get out of the pan. You have to cut and then flip it over onto the serving dish. It is very, very rich. It made my teeth hurt it was so sweet!

Cranberry Pork Roast

I made this last night and it was a big hit!!! I did not add the sugar because others said it had been too sweet. The gravy was marvelous and I served it with mashed potatoes and fresh brocolli and a green salad. Meat was very very tender. It cooked all day in my crock pot and was ready when I got home that night. Thanks for a grrrreat recipe!!!!!

Alaska Salmon Bake with Pecan Crunch Coating

I made this for company and they absolutely loved it!! I don't particularly like Salmon but it didn't really taste "fishy" at all. This one is definitely a keeper. I served it with "dirty rice" and steamed asparagus. Thanks so much for this great "Lenten" recipe.
